I purchased this to try a different fat aside from seed oils which lately have a bad reputation whether deserved or not. I've used it for pan frying things like eggplant (for eggplant parmesan), chicken (same as eggplant) and fish. I also use it for frying up multiple types of eggs like scrambled, over easy, etc. Also great for potatoes of all types. One surprising thing is that I have started to toast bread in my cast iron using this as a fat rather than butter. Bread comes out crunchy on the outside but very fluffy and light on the inside. For a sourdough toast (for example) where you want to taste the sourdough and not butter, this really works well. The only downside is even when pan frying with just a thin layer of melted fat, this tends to smoke at the beginning as the heat comes up, and then the smoke goes away. I figure this is just some impurities but not chemical impurities, just maybe remnants of beef? I have the same result when deeper frying (usually more fat in a cast iron pan, never tried deep fry). If you are using this stovetop, keep your fan going at high speed, especially at the start. Read more

Finally tallo is considered a healthy option. As with everything you have to use sparingly. Too much of anything on a regular basis is not good unless it's love and kindness. This deep fries everything beautifully. It's rendered down clean. No offense putting smells. I just keep it I. A cool dark place. It's cold in my neck of the woods right now but so I can store it outside of the refrigerator but when it gets warmer I will be storing it in the extra fridge. I like the fact that the Oder is very minor. The price for 100% suet grass feed and finished is reasonable. I have seen others charge more for a mix or won’t say where the fat is from. If you are purchasing for skin care such as tallow balm. It will need to be dry rendered to remove all the moisture. The bubbles indicate the moisture and can cause your tallow to mold.
