Demerara Shortbread Ingredients: 1 Cup/2 sticks of unsalted butter. If you are using salted butter reduce salt to ½ tsp 1 tsp salt ¾ cup sugar 1 tsp vanilla extract 2 ⅓ cups unbleached all purpose flour 1 large egg white lightly beaten with 1 Tbs. water ¼ cups Demerara sugar In a medium bowl, cream together the butter, salt sugar, and vanilla, then beat in the flour. Shape the dough into a log that is 1 ½ inches in diameter. Brush the log all over with the beaten egg white and roll it in the Demerara sugar. Wrap the log and chill until firm, at least 1 hour and up to 2 weeks. Preheat the oven to 325 degrees. Line with parchment 2 baking sheets. Remove the dough from the refrigerator and slice it into ¼ inch thick rounds. Bake the cookies for 20 minutes or until they are a light golden brown around the edges. Remove them from the oven and transfer to a rack to cool For a more substantial cookie, slice the dough ½ inch thick and bake the cookies for 30 minutes. Read more
