Sharp means accurate and clean cuts. So yes, you need to be careful but also, it cuts like butter. I've used this at least once every week since I bought this and it still feels razor sharp. This a little bit of heft to it but it's because it's a solid piece of metal. It definitely helps with control. Compared to the cheap plastic and metal versions that are the only kinds I can find in-store, you don't have to worry about any component snapping or bending over time.
