I bought this to actually use to skin and carver up deer. It can be used to carve any type of meat, like filleting fish, chicken, pork, lamb, vegetables, etc. I needed a flexible blade that stays sharp to take the silver off of deer meat but that could also cut tendon and be used to debone and even skin deer to remove the hide. It's been very affective, I may get another to have two. Sometimes getting at the inside and back loins is difficult. A couple is slits with this knife and the loins pull right out. I know not everyone is butchering deer, this is just an example. This is an elegant knife and very sharp. It has an ergonomic comfortable handle, stays sharp, and cleans up easily. The handle can become slick when bloody or fat soaked but is does not stain. Just wipe it off and keep going. Its flex blade really helps get the most meat. It even carves turkey very well. It is designed well and uses carbon steel. Don't put it in the dishwasher. Hand wash it, and then put some olive oil on a paper towel, lightly oil it, and it should never rust. It does not come with a sheath, but the box is thin and designed for the knife so I didn't bother. The price is right! If you need to replace it for any reason, it won't break your bank. I love this knife. It is my new baby in the kitchen. It is so sharp and smooth that i can debone a pork shoulder in record time with minimum pressure. I have several knives I have gotten from Japan during my travels, but this out cuts them all, seriously. High quality. Read more

Love the look and feel of this knife. It's super sharp and it's great for performing thin slices in a straight line. My only wish is that the blade was a little thinner to allow it to flex and bend while you're removing the skin of a fish on a cutting board. This is why I gave it 4 stars. If you don't want the knife to flex like I did, then it's definitely a five-star knife. Read more

I butcher all my large beef and pork products I buy in bulk from Costco and Restaurant Depot for years I previously have been using a 7" fishing knife finally purchased this 9" beauty and used on 2 beef tenderloins for Thanksgiving... I slashed the time butchering by 70% it cut meat like butter and I regret not buying much sooner...fantastic investment for the price point and I highly recommend this to anyone In need of such a knife and not wanting to spend $100+ on super expensive Japanese blades...l also look forward to using this blade on filleting fish...works fantastic!!
