I butcher all my large beef and pork products I buy in bulk from Costco and Restaurant Depot for years I previously have been using a 7" fishing knife finally purchased this 9" beauty and used on 2 beef tenderloins for Thanksgiving... Love the look and feel of this knife. It's super sharp and it's great for performing thin slices in a straight line. My only wish is that the blade was a little thinner to allow it to flex and bend while you're removing the skin of a fish on a cutting board. This is why I gave it 4 stars.
