Ideal for the French omelette. Persistent non-stick.
I've used the most expensive and the cheapest non-stick skillets, and this one is excellent. I don't bang it around like a cast iron and I'm very deliberate with using only wood or silicone and no ripping heat on a dry skillet. You shouldn't do that stuff even on the non-sticks that claim you can; that coating eventually fails. It's perfectly non-stick after many months of frequent usage and is the perfect size for a 3-egg omelette. The construction is excellent and the heating is completely uniform.
