This is an excellent boning sized knife that is actually very versatile and I use it for boning and prepping meat but also for slicing and dicing. The knife and hefty and the grip feels good in the hand. The knife came from Mad Shark very sharp out of the package. This knife has become one of my favorite go to knives. The stainless has been excellent and corrosion resistant. I keep this knife edge at around 15-18 degrees and it has become a real work horse knife for me. Read more
I was expecting a pretty good knife, but this is even better than I could have hoped for. Extremely sharp, attractive, comfortable handle and cuts very well. I’m not sure what material the handle is made from, but the shape makes it very comfortable to hold. I do have very large hands, but I still can get a good comfortable grip on it. It’s nicely contoured with varying thicknesses along it’s length. The transition from the handle to the blade is smooth and I can grasp the top of the blade a bit if I want to. There are three decorative shark gills on the handle that are not absolutely flush with the handle, but certainly it’s not objectionable. If anything, it might give just a tiny bit of a more secure grip. I don’t know the exact composition of the metal used for the blade, and honestly a lot of that wouldn’t mean much to me. I just want a blade that’s sharp, holds the sharpness for a reasonable amount of time, can be sharpened and doesn’t easily corrode. This knife arrived sharp, very sharp. I always first test a knife with the paper test, how easily it slices through the edge of a piece of paper. I don’t think I’ve ever had one arrive this sharp. Like the proverbial hot knife through butter. I do tend to mostly use larger, 8” sorts of kitchen knives for my meal preparations, but did use this for a few meal preps. It worked very well, especially to remove those annoying tiny bones in a couple of fish fillets. Haven’t had a need to sharpen it yet, but I have no doubt that wouldn’t be a problem. I will also trust that this is corrosion resistant as pretty much all kitchen knives are. This also comes well protected in an attractive box suitable for gift giving or for storage. This is a fantastic knife for an attractive price. As good as the knives in the German set I purchased decades ago, likely for much more money. Very attractive, comfortable to hold and use, and certainly arrived extremely sharp. I will be looking for other Mad Shark knifes and can wholeheartedly recommend this roughly 6” boning knife. This MAD SHARK Boning Knife is extremely sharp. It was a present for my husband. He cut himself the first time he used it. His comment: “I had no idea how sharp this knife is!”. It’s a pleasure using this knife. It sits very comfortably in the hand. The curve of the blade makes it easy to attack things like ribs to get every bit of meat off. It cuts through sinew and tendon with no problems, which makes stripping a tenderloin much easier. I thought I’d be using this pretty much for boning during food prep. We own several German steel and Japanese steel knives that are wonderful in the kitchen and more expensive than this boning knife. I find myself picking up this knife more and more often to use for a variety of meat prep tasks. It’s super sharp, comfortable, and nice to use. We have three professional chefs in the family. The two that used this knife during holiday meal prep both commented on how much they liked it and both asked where I found this knife. That’s a real compliment to Mad Shark. The chef that is a head chef at a famous local restaurant spent a fair amount of time looking at and trying out this boning knife. I’ll be taking a second look at other Mad Shark knives. Read more
My first time using this knife I used it to cube up some pork fat I was going to grind into my venison. My first impression was a good one due to the knife's razor sharp edge out of the box. I was also really enjoying the balance of the knife. It feels comfortable to hold and work with. I would recommend this knife to anyone processing their own game meat but I would advise them to be careful when working with fatty pieces as the handle design of this knife is very smooth and it becomes very slippery when handling fat or fatty cuts.
