These do exactly what I need them for. I use them for gutting anything from hogs to deer. The fact that they can gut a hog, and cut through all that hair and fat, that says all I need to know. These are very sharp and hold an edge. I can usually gut several hogs with one blade. Thin skin at least 3 of them with one blade. Would probably give 3.5 stars if it were an option. Very sharp out of the package which is great for precision cutting but it just seems that they don’t hold and edge very long. Especially if you get into anything on a fish or animal like a bone it pretty much instantly dulls it. Think I’ll just stick to a wet rock and old school filet and boning knives. Read more
