No Serious Blood Spikes Here!!

I am really glad I found this rice. I am type 2 diabetic and this is the only rice that doesn't do a dramatic spike to my blood sugar. It does raise it some but not out of range. I rinse the rice several times before cooking and add 1 & 3/4 cups of water to 1 cup of rice. Put it on the stove, bring to a boil, reduce to low heat and cook for 18 minutes. Perfect every time! Good, not great

I write this review as someone who typically cooks with basmati, koshihikari, or jasmine rice, so your impressions may differ. Regarding aroma and flavor this rice is not very different than most generic white rices. I typically rinse rice before cooking to remove excess starch from the kernels, and this rice rinsed clean immediately - perhaps due to the higher protein content? It took slightly longer to fully cook, about 22 minutes versus 20 for one cup in two cups of water. The cooked kernels were distinct and had a pleasant tooth - definitely not mushy. We decided that this rice would be best for "sopping-up" when topped with stews or red beans, or an ingredient in dishes like jambalaya. It isn't flavorful enough to stand on its own. Read more
