Organic celery.
When it is fresh it is great. I have a 50/50 chance of that. Many times I cannot see the bottom core where the branches come together and they will be black or starting to turn black. Also I usually only get to use about half of the celery bunch of stalks because there are many slimy stalks inside of the bunch and also parts where the stalk is yellow brown and hollow on.at least half of it. Like I said 50% and sometimes more it is crispy and refreshing after clearing out the crud. We have found that cutting off the bottom and all the bad parts and then drying completely and wrapping the bunch gathered closely together tightly in aluminum will keep it fresh for at least a week.
