The Italians do wonderful things with their grains, risotto (from this ingredient) and polenta being the two the leap to mind. They're both a bit labor-intensive and time consuming, but worth every minute of the effort. (I say that even when it's my effort, for anyone rolling their eyes in the belief that someone else might be doing my cooking.)
