Great thermometer
For $4-5 this is very efficient and functional equipment. It's "instant read" because the dial is constantly adjusting to the temperature based on the metal inside the stem. So if you place it in boiling water it will take about 10 seconds for the metal in the stem to expand and accurately display the temperature of its surroundings. When I received it the gauge was off by a couple degrees, which is no big deal because I just placed it in the plastic holder it comes in and let it sit in boiling water until the gauge was steady and adjusted it according to the instructions (which is very easy - just twist the dial) to 212 degrees. Now it works very accurately, you can always test it by setting it in ice water or boiling water. I've only had it for a few days so I will update if anything happens. I only use this for measuring water temperatures - and for that it is definitely worth it over the more expensive thermometers! If you are planning to use this for measuring your meat temperatures I would suggest going for a digital read where the measuring part of the instrument is only in the tip. There is a dimple 2" from the tip where the thermometer must be submerged into whatever to give you the proper temperature so you could insert it into the side of a thin cut of meat and it should work properly.
