The 8" size of this non-stick frying pan makes it versatile for smaller portions and I was pleased to find that, even though this pan does not come with a lid, the glass lid from my previous 8" pan fits this one perfectly. I tested the pan twice, once with an omelette and again with sautéed vegetables and it performed well with both, the sturdy pan heating quickly and evenly and the food sliding out of the pan readily. The description describes the cooking surface as "ultra-smooth" yet the hybrid non-stick surface has a distinct texture that one can readily see and feel, yet food does not stick to it despite the texture. This texture apparently makes the pan’s interior surface more durable and scratch-resistant and can handle both plastic and metal utensils without any damage to the surface. I like that the pan is made with two layers of stainless steel: non-reactive on the interior of the pan that comes in contact with food, and "induction" stainless steel on the outside surface, which is compatible with induction cooktops. Also great is that in between these two layers of stainless steel is aluminum and the combination of this metal "sandwich" is that it allows the pan to heat quickly across the surface without creating any hot spots. Clean-up of the interior was a breeze yet I did notice when drying the outside of the pan that it is not as scratch-resistant as the interior as there were now a number of scratches, not only on the bottom but also along the sides, which was surprising for a pan that has been gently used only twice. I doubt it will negatively effect the use of the pan but it’s scratchy outside appearance after such short use is not ideal. In terms of the handle, for many, it’s a real plus that the pan is oven-safe up to a temperature of 500 degrees Fahrenheit, though I, myself, never use frying pans in the oven. I like that the all metal handle is hefty and longer than most so -- despite it not having any kind of heat-resistant covering over it -- it will likely remain cool to the touch even when using high heat or long simmering times. As for compatibility, this excellent pan can handle virtually all types of stovetops, including induction, gas, electric, or ceramic, which adds to its versatility. Finally, the description states that this pan is made with materials that are free from harmful chemicals like PFAS, PFOA, lead, and cadmium, which we can all agrees, is a good thing! Read more

THE COOK'S COMPANY Non-Stick Frying Pan - Premium Skillet for Everyday Cooking (Size: 8 inch)- This pan works very well. I'm tempted to replace all my other cookware with this brand after trying it. I am not quite sure how much to attribute to the material they use or the design they have inside the pan that allows it to be nonstick. The inside of the pan has these intricate hexagon shapes that makes an interesting pattern. It looks cool, but it also seems to help a lot. I can cook with a very light layer of oil or butter, and I'm impressed at how easy it is to flip eggs, for instance. This pan, the 8 inch, is perfect for frying eggs. I have mostly used it for that because of the size and how easy it makes it to cook overeasy style. The pan feels very well-made. It has the weight of the stainless steel pans, but the inside seems to be a darker metal with the circular pattern throughout. Heat seems to distribute evenly. I really like how smooth it is to flip eggs or veggies in this. I also found it's very easy to clean since nothing really sticks to it. I'm impressed. Overall, it's a solid 8-inch pan. I would get another if I ever need once, but I feel like this is made to last. I'm hoping to replace the rest of my cookware with this, however I want to test it out a bit longer to make sure.
