I've been using Cangshan knives for a number of years now, and they hold up really well to daily use. I've been using this set for about two months now and I do everything one shouldn't do with their knives, when it comes to care. I understand that to get the maximum lifetime potential out of something, it should be babied. But I'm more about just using my kitchen tools and then will replace them when needed. If the knives I use can't hold up to being used a lot and washed in a dishwasher, then I'll know that they need more babying than I can give them, and move on to something else. Luckily, even though the company is clear about their knives not being dishwasher safe, I've always put these, and also my old set I used for many years, into the dishwasher and they always looked and worked flawlessly. They remain sharp and there's never been any warping or rust. They have held up even better than my knives from other companies that are listed as dishwasher safe. I do always use the dryer setting on my dishwasher, so my knives are always dried right away after being washed and not left to air dry. The knives are remarkably strong. Their blades don't bend and flex even when cutting through dense foods. Because they are so strong, the cuts they make are clean and they don't tear into foods. I also appreciate that they have included a pair of kitchen sheers into this and many of their other knife block sets. They're wonderful for using to cut into meat packaging and then also when needing to cut through poultry bones. They work well and clean up just as nicely as the knives do. These Cangshan KURO Series knives arrived with edges that were impressively sharp right out of the box. The 67-layer Damascus pattern on the high carbon X-7 steel blades looks elegant without being flashy, and the sleek gray handles feel comfortable and secure in hand, even during longer prep sessions. The steel has shown great rust resistance so far. I've been using the set for a couple of months now, and these have become the knives I automatically reach for when cooking. The chef's knife handles onions, herbs, and proteins with smooth, controlled cuts, and the smaller ones make quick work of detail tasks without feeling clumsy. The steel holds its sharpness well through regular home use, so I haven't needed to actually sharpen them yet, they touch up nicely on the included honing steel. They strike a nice balance between being substantial enough for heavier chopping and nimble enough for finer slicing. The block is sturdy and keeps everything organized on the counter. The scissors work well, but I have chunky fingers and sometimes my thumb gets a little stuck, so I usually end up using my Fiskars kitchen scissors instead. I wish the handles were a little wider. Overall, this set performs reliably in everyday kitchen work. If you're looking for attractive, capable knives that feel like an upgrade without going into professional territory, these deliver. I appreciate the quality and how they make prep more enjoyable. I'm not sure I'd consider them a great value for the money, but they are pretty darn good overall. Read more

Out of the box I was impress with the look and feel of the Cangshan knife set. The knife block is all dark gray and looks great sitting on a white countertop. The block is solid and stable with no wobble. Each utensil fits nicely in place. For the knives, they are sharp out of the box. Each knife has a great feel when being handled. They have a nice balance to them as well to help reduce the effort when using them. The blades of the knives have a full tang through the handle. The knife's blades are listed as Damascus steel blades. But that is the thing I cannot confirm. The pattern is almost too perfect. I would think that since the knife has a full tang, the Damascus pattern would have continued all the way through the bolster. There are ways to truly test for true Damascus, but I don't have the materials to do so. The tang continues all the way to the butt of the knife as one piece. I will say that the pattern on the blades is really nice. Each of the knives have a G10 handle. The grip is comfortable and secure. Again, they provide a good balance to the knife. The sears are solid and large. They are made from what seems to be carbon steel. They can be taken apart for easy cleaning. The knife set most definitely would make a good starter set for a gift or someone look for a reasonable priced upgrade. Read more
