I'm going to start by saying this sharpener did get our knives really sharp. It was fairly easy to use. This is a good thing because it did not come with any kind of instructions at all. I played around with it pretty clueless for several minutes, until I looked on Youtube for a similar knife sharpener, and I saw how the parts go together. I discovered there are two different grits, one on each end of the cylinder. One is 400 and the other is 1000. I was careful to only remove one of the white caps at a time, because the size is on the caps and nowhere else. Though you can feel the difference pretty easily. I used this sharpener on several different kinds of knives and it did a good job. You pick from two different angles, depending on your blade. Use the 400 grit first repeatedly, then switch to the 1000 grit to finish. There is a cloth included in the kit to wipe your knife off afterwards, to clean off the fine silt from the sharpening. We already have a couple different knife sharpeners in different styles, but this one is to me, the easiest to use. My husband has one that requires a knife to be put in a jig and clamp of some sort, which I never got the hang of, so this one is a lot simpler than something like that. This sharpener is very well made, seems quite sturdy and solid and I think it will last a good long time. I don't know if there will be replacements for the grits, as I'm sure they will wear out. Easy to use. I like that it has sides for both large and small knives. The rolling motion is very fluid. I have mostly used the 15 degree angle on some of my kitchen knives and they have turned out much sharper. I like that i can keep the stones covered when not in use. The wheel part sets nicely on the base when you are not using it. Makes it a nice conversation starter when you have friends over. I like showing it off, because it is just that easy to use. I wouldn’t recommend this product. The idea feels like it’s trying to fill a niche that doesn’t really exist. For the price, you’d be better off investing in a set of quality whetstones and learning proper technique, or going with an automatic sharpener that finishes the job in a fraction of the time (even if the results aren’t quite as refined). Despite the sleek dual-angle design and detachable discs, the time it takes to actually produce results is not insignificant; in fact, it feels slower than using a traditional whetstone. The end result doesn’t justify the effort. It’s stylish, sure, but more form than function. Read more
Honestly, didn't expect much as I've seen every YouTuber say don't use anything but a whetstone. Well, I don't have to learn medieval sword sharpening techniques with this bad boy. It had no instructions, but from my time watching people sharpen stuff I know it's low to high grit when sharpening. So I busted out my old chef knife that used to cut paper by touching it and tested if I could make it do that again. It did with some sweat put into it. I'm not sure if this is as bad as YouTube people make it sound on blades, but my chef knife can cut like 90% as good as it used to and that's a solid result to me. I might even be able to do 100% with enough cautious passes, but 90% is fine for me. Read more
This device is much easier and faster than the traditional flat whetstone, but has its limitations. It limits you to only two angles, 20 degrees and 15 degrees. Secondly, it comes with only two diamond grits. One is 400 grit; the other is 1,000 grit. White plastic caps identify which is which, but after removing the caps for use they are easy to tell apart by feel. They appear to be detachable for cleaning or replacement, but there are no instructions for doing do or replacements or any other grits offered. The only instructions provided are the images in the Amazon sales material. That really should be sufficient, but it’s still a good idea to search some videos on this kind of sharpener. The process is straightforward. Choose the angle and place the blade sharp side up on the narrow or broad side of the angle block depending on the size of the knife. I found it best to have the block close to the handle but not so close that you are on a thickened part of the blade. First use the 400 grit for a few hundred strokes with the point in one direction, then reverse the orientation of the point and repeat. Switch to 1,000 grit and do about ten strokes for each orientation. Pull the knife once or twice for each side nearly on the flat to take off any burr. Finally, use the cloth they provide to clean off any filings. Read more
