Can't believe I didn't get one sooner... amazing kitchen tool!

I love this thing. Pardon my ignorance but I didn't even know these were a thing until a few months ago. I then started hearing about them and was like "why would I need that". Holy cow, wish I would have jumped on it sooner. This is amazing. I can't say the Instant Pot brand is better than another per se, but the simplicity and versatility of this thing is great. I got the 8-quart on a lightning deal for about the cost of the 3-quart and I'm glad I did. The capacity is not as importance to me as the actual size. When saute'ing (is that a word?) something before pressure cooking, it's nice to have the extra surface area more similar to a frying pan. And you want to saute' in the pot as much as possible to capture all those great flavors, etc. Anyway, it looks a little intimidating with all the buttons but, trust me, it's super simple to use and creates fantastic dishes easily. Don't be too fooled by the published "cook times" you see on many recipes, it takes quite some time to heat up, pressurize, and then vent when done, but it's still much faster than other conventional methods and produces great results without the monitoring. I'm self-taught and used to be a private chef in Beverly Hills. When I was growing up, my Mom used to have one of those old-school pressure cookers with the weight on top that spit and shook and released steam as it cooked. When I was on my own, I bought one and used it pretty regularly, but it was still the old-school kind, but the pressure valve was built in. It was a pain to clean, though. And then I found this one. It's electric, which means that I can put it on my center island and not have to use the stove. I love all the features and programmability, but I really just use it for my Italian sauces, making my patented "fall-off-the-bone" ribs and the meatiest, most tender beef stroganoff ever. It is flawless. It's so easy to set and use that anyone can do it. And the best part is that you can set the timer and it won't start counting down until it is already under pressure. The cooking vessel comes out for cleaning and although I usually clean it by hand, I have used the dishwasher from time to time--it's fully dishwasher safe. The rubber gasket fits firmly and is not difficult to remove for cleaning and reinstalls easily after cleaning. While I usually use it as a pressure cooker, I have just started using it as a crock pot and am loving how easily it can do that too! I purchased the larger unit so I can fit more ribs in it! It's a bit big, but well-worth the cabinet space for all it can do. Highly recommend it for virtually anyone that cooks! Read more

I wish I could give this a ten star review but amazon only allows up to 4 stats. I did just get it but over all the kitchen Appliances this one takes the cake. I can cook a whole chicken covered in herbs and veggies in a broth in 25 minutes flat and it falls off the bone by that time. Amaxing pressure cooker, tons of amazon books and recipes as well as apps on the AppStore. It’s not difficult to understand all versions. Definitely get this model if possible as it has egg anndddd cake also buy a spring release pan pan for cakes etc regular 7” spring release exists so does dadio brand which is slightly deeper I think but I don’t even cook lasagna in the extra pan I just put 1.5 cups of water down literally the sides it works like heaven best lasagna ever made! . The only difference besides 40$ more for the duo 8qt is duo has a yogurt button but you can still do that and then some in the lux8Qt on Manuel mode so it just makes sense. Using it daily . Invest in extra rings as after time those I hear can get stinky . Those are cheap and if you want you can get egg stacker to stack more eggs than it comes with and a steamer as it dies that too: this is beyond overly excited as I neverrr put teviews but taking the time it is just that amazing! Moving up from a regular pressure cooker to the Instant Pot is a blessing for me!

That said, I've been researching the Instant Pot for some time as I considered changing from a regular stove top pressure cooker to the Instant Pot. My primary motivation has been the concerns that come with using a pressure cooker. I've blown one up on the stove while cooking lemon chicken. (horrible clean-up!) and I've have problems with getting the lid to seal properly which means I end up having to start the cooking process over. Also, I feel like I'm chained to the stove when I'm using my regular pressure cooker and can't do anything else besides monitor it. The safety features of the Instant Pot eliminate all of those concerns. I chose the 8 QT model even though I only cook for two people since I like to make several meals at a time. I regularly cook beef, caribou, and chicken including meatloaf and chili several times a month in my pressure cooker. It's my favorite way to cook meat of any kind since I can take it out of the freezer, put it in the pot and serve a wonderful meal in a couple of hours (from prepping to finish). The Instant Pot is well suited to take on my regular cooking. For my first attempt, I made Ginger-spiced chicken and vegetables in 20 minutes using the pressure cooker function and tips I learned in Lorna Sass's cookbook. The meat was tender and the vegetables can easily be mashed or eaten with the ginger/raisin sauce. The Instant Pot was easy to set up and even easier to use. The clean-up was also easy and I hope for a long and happy relationship with my new primary method of cooking - the Instant Pot! Update: Today I made my usual "Pressure-cooked" meat loaf meal in the Instant Pot. It's a family favorite and regular menu item as the leftovers make wonderful "meat loaf burgers". I'm happy to say it was a raging success with 20 minutes of cooking time. If you haven't tried cooking meatloaf in a pressure cooker, you're missing out on an easy and tasty meal!
