I admit I am new to this world of fine matcha. I almost made my first experience with a food grade brand which would have been a mistake since food grade tends to have a bitterness to it. So I opted to buy the best I could afford without breaking the bank and feeling stupid about the purchase later. I know there's different ways to prepare but I prefer to use a fine mesh to strain the powder through. I invested in the wise and I'll glad I did because it works beautifully. This matcha is nice. There is no bitterness, it is smooth and even has a hint of sweetness. It is what I would expect tastewise. I don't add anything to it when I drink it as I prefer the natural flavor. There is no umami. I don't know if there's a technique to creating foam but I tried and tried and got very little. My next purchase will be a tea known for umami because I want to try it. I did a smear test and the tea is smooth. No grains! Nice bright color too. Update: acutely if you add about 2 teaspoons, you can get it to foam. Read more

My favorite matcha ever! Super complex blend of Unami and sweetness. There’s a tartness and a chalkiness that work well together, almost like a malted fruit.
