This is my first Mecer Knife Set I have ever owned and I am beyond excited to have them! They are extremely sharp and strong and have a very comfortable handle, which makes using them a pleasure. I am not a professional chef but I do have a large family to feed and have been cooking for 8-10 people for over 30 years now, and when it's my turn to cook I make everything from scratch which usually means a lot of chopping, slicing, and dicing. I was using an assortment of knives: Shun Ken Onion, Chicago Cutlery, and Henckels. Even though I like my other knives I've been looking for an entire new set of quality knives that match and have had this Mercer knife set and the Shun Ken Onion knife set on my wish list for over a year now. I was very close to buying the Shun knife set but I kept coming back to Mercer over and over and finally decided to buy it because of all the rave reviews from professional chefs and culinary students. One bad thing about the Shun, Ken Onion knives is that they can't handle being used daily without getting micro-chips on their blades. As I said before these knives are sharp and strong and they look like they are exactly what I need, work-horses! The handle of this Genesis set is so comfortable to hold, my hand didn't feel fatigue as when using some of my other knives. I also love the case it came with, its really big, the knives are held in place very well and it has a few extra slots for additional knives. I don't really plan to use the case but I'll keep it just in case I have to travel with them. I purchase the Tojiro (magnetic) Knife Stand to use with this set and I am very happy with the how well it holds all my new Mercer knives! I ordered these for myself because I work in a kitchen, and it can often be difficult to find a reliable knife when sorting through ones they keep in house. Most are dull, and almost all are too worn or mistreated to be of any good use. When these arrived in the mail, I was very excited to open the package and take them to work with me that day. They were all neatly organized in their own slot with transparent blade covers on every knife, and they were so beautiful that I almost didn't want to use them. As every stroke of my chef knife fell, that feeling quickly melted away. It felt like a dream, how easily the blade sliced through that first piece of chicken on my cutting board. I have had a chance to use every knife in my kit at this point, and they all perform spectacularly with whatever task they are faced with. Chicken, pork, beef, vegetables, even the softest of tomatoes are sliced and diced effortlessly. It is amazing what you can accomplish with a good knife, and these knives are top quality. With proper steeling, they all remain just as sharp as the very first cut. If you are searching for a quality personal set or one for a gift and are wondering which ones to get, search no more. Wow! Best investment I ever made. I'm a chef working in a college cafeteria feeding over 1000 students a meal. I do alot of carving and food prep. These knives make my job 100% easier versus the cheap knives they have in the kitchen. Since I bought these 6 months ago, I no longer have blisters or calluses from fighting through items with dull knives and my coworkers have began asking me daily when I arrive to use them. They are extremely sharp! Very balanced! Light weight! Comfortable! And easy to clean. I highly recommend buying a honing tool to keep your edge and blade like new. I bought these steak knives to replace my old serrated ones from college, the kind that "never need sharpening". Well, it's true I never sharpened the old ones because they had very deep serrated edges, but this meant literally tearing through your meat. In my quest to upgrade all of my kitchen-ware and knives, I bought these to match my other Mercer cutlery. I've been very happy with the quality of the Mercer knives and I like the "rubberized" handle because it is thicker, offers better control when wet and still looks like very high quality. You can't tell from the pictures, but these steak knives have the same thick rubberized handle, very comfortable. From the tip to about 1/3 of the way down these knives are serrated, very slightly though, not very deep. I haven't prepared a good steak yet to test these out, but on fruits and veggies that I've cut, these are great. These knives are very sharp and heavy enough that I would never imagine these getting bent from a little misuse, which should never happen now that we have nice cutlery. Great starting point if you need a knife and bag, does exactly what it needs to do. Knives came sharp. I recommend buying knifeguards as well along with this, as these do not come with any. Read more
