I’ve been using the PAUDIN Knife Sharpener specifically for my PAUDIN kitchen knives, and it does a great job. Whenever the blades start to lose their edge, a few passes through the sharpener brings them right back to razor-sharp. I haven’t used it on old or heavily worn knives, but for regular maintenance on quality blades, it works really well. The design is simple and easy to use, and I like that it has multiple sharpening stages. The non-slip base keeps it steady while I use it, and it only takes a minute or two to get results. It’s a convenient tool to have around and definitely helps extend the life of my knives. Great value and works exactly as expected. These steak knives are well made, with a fluid design that fits well in the hand. The steel is high quality and holds an edge rather nicely. I have these straight-edge knives and a serrated set as well. If you're considering a set of only one type, get the straight-edge. They perform especially well with finer cuts of meat, poultry, and fish that a serrated edge would tear but do well with more robust cuts as well. For service, the serrated are sent to a pro but I prefer to hone and sharpen knives myself when possible. If you're unfamiliar with the difference between honing and sharpening, I recommend familiarizing yourself with the practices. You'll be glad you did and these knives are worthy of the knowledge. Very handsome, very sharp, well made, and I've experienced a lot of knives. I have over 300 knives in my collection, mostly one off customs, camp knives, skinners, Bowie's, combat, you name it, many I've made myself so I'm not a knife rookie. these however are for my diner table and I firmly believe you would have to spend easily three to five times as much to get just a small quality advantage over these. I was very apprehensive waiting for them to arrive as I expected for this price I would likely be returning them as cheap knockoffs, but I'm happy to announce I'll be keeping these, I just won't be telling anybody what I paid for them! These are very nicely balanced knives, hefty, easy to hold, and they cut through steak in a flash. The blades are the right length to do the job and are heavy enough not to flex all over the place the way cheap steak knives do. The handle shape and size is just right. The scales to tang fit could be a little smoother, by which I mean the top of the handle should be polished a little more carefully, but this is of no real issue for a $10 knife. Stylistically they coordinate with the Henckles and other high end European knives in my knife block, which is a nice but very minor aspect. I am very happy with them. Read more

I bought a 3 1/2" Paudin paring knife a while ago. It was and is absolutely great. It was exactly the perfect length for my purposes. The blade was sharp and made of good quality steel. The handle (which I don't see anymore on Paudin's paring knife on sale online on Amazon) was sturdy, fit my hand perfectly and was extremely durable. I used my perfect paring knife a lot. I loved it. With all the slicing, dicing and chopping tasks, inevitably, the blade became a bit dull. Enter the Paudin sharpener. The sharpener is an ergonomic, easy to use tool to put an edge back on my favorite kitchen knife. The dial on the side of the sharpener exposed (3) different sharpening elements, each with more/less aggressive sharpening characteristics to include polishing. (The sharpener also has a setting for bread knives and another for scissors both of which I haven't tried yet.) There were a couple of very small "nicks" on the blade close to the handle and the center of the blade was the most dull section of the blade. I used the most aggressive setting (only in the one recommended direction) and then the less aggressive sharpening setting and finally the polishing setting. On the positive side, the blade is sharper than it was. It does not come close to its original sharpness but it is noticeably better. The portion of the blade close to the handle, where once there were perhaps 2-3 small nicks, is now littered with a string of small nicks. I re-read the enclosed literature to see if I was doing something wrong. I tried sharpening and polishing my favorite knife several more times to get the results I expected. The oldest nicks are less noticeable. The newer nicks are also less noticeable. There are however, more nicks on the portion of the blade closest to the handle. To be fair, perhaps the hardness of the blade lends itself to this sort of result. Perhaps the blade material contributes to the problem. Perhaps the thickness of the blade contributes to the issue. Perhaps it's a combination of issues. Whatever it is, this Paudin sharpener doesn't work well on my favorite (Paudin) knife. (Paudin: What did you do to my favorite knife?!) Read more
