After a month of use: I got this for $26 on sale. At that price, this knife has been very impressive so far. Edge retention is great as I haven't needed to so much as hone it in a month of use with meat and veg on a hard maple cutting board. It's also comfortable to use, the fit and finish is good, and it comes in a nice box. At the current (12/31/2025) price of $45 it's still a steal. In fact, it's better than the Victorinox fibrox (which I also own) which is often touted as the best budget chef knife. Also, it's stated in the images that the "Damascus" pattern is fake- laser etched on. So if you buy this and get mad about that, you have mush for brains. Read more

This is a review for the 12" Powdered Steel Brisket Knife, not the fillet knife as Amazon is presently showing. Very nice looking. Have not used yet but, I have no doubt it will work well. Clearly it is very sharp and it does have a 12 degree bevel. Minor defect, small chip on both sides of the edge near the tip. Should be able to buff out quickly. Wish the company disclosed more about the powdered steel and the manufacturing process. It appears that there is a steel process called spray form that is being marketed as powdered steel and it would be nice to know exactly what this is. Read more
These knives are very sharp! I bought them for my husband and we were at the ER same night. But he really likes them - he just needs to be supervised when using. I thought a 62 year old would be ok with sharp objects. Read more
