Viking has their hybrid plus 3-ply stainless steel ceramic nonstick cookware. It is called hybrid because the cooking surface combines exposed stainless steel with the nonstock ceramic (i.e. NO PFAS otherwise known as the forever chemicals). Stainless pans are known for the higher-heat searing and browning and durability. Ceramic provides the nonstick properties. Thus this hybrid combining both gives the qualities of both of these materials in one pan. PIC1 (I have labeled each picture in the upper right corner because they do not always appear in the order I add them to the review) shows the two pans. The outer portion of the pan is stainless steel. The pan is a sandwich of stainless exterior, aluminum core and stainless interior (partial) which is where the 3-ply term comes from. The reason for the aluminum is that it spreads heat much faster and more evenly than stainless by itself. This results in better edge-to-edge browning and consistent simmering. It gives faster response to changes in burner temperature. PIC2 and PIC3 show the bottom of the two pans which work with induction, gas, electric, halogen and ceramic cooktops. PIC4 shows the side of the pan. I measured the 9.5 inch pan as approximately 1 7/8 inches and the 11 inch pan as 2 inches. The weight of the 9.5 inch pan is approximately 34.4 oz and the 11 inch pan is approximately 43.5 oz. Finally, PIC 5 shows the bottom and side of the pan. This clearly shows the stainless steel and ceramic portions. We used the 11 inch pan to sauté brown rice, peas, carrots, lima beans, etc and it turned out really well. We used the 9.5 inch pan to make scrambled eggs which don't work well in our stainless steel pan but basically slid right out of the Viking pan. Both pans cleaned very easily after cooking. If you are looking for 9.5 or 11 inch pans you should consider the Viking hybrid plus 3-ply ceramic nonstick frying pan made without PFAS. They will get the job done! Read more

I wouldn't recommend using metal on them often. The surface is raised stainless steel. The base adds strength and helps prevent warping over time. Ease of Use & Cleaning: Cleanup is straightforward—most residue wipes away easily, and the pans are dishwasher-safe, but hand washing is my preferred method. The signature handles remain comfortable and cool during stovetop use. The best product I found to keep the pans looking new is barkeepers friend. Versatility: These pans are compatible with multiple cooktops, including induction and gas, and are oven-safe, making them a versatile addition to any kitchen. While cooking, be sure to reduce the heat lower than usual. Overall Impression: The hybrid pan set is a smart investment for cooks who want durability without sacrificing nonstick performance. The media could not be loaded. I'm an avid cook, and I tend to love stovetop cooking over baking, so nice frying pans have always been important to me. A few years ago, we got an induction cooktop, and it can only use very specific pans made of a metal that can act like a magnet, and generally, they are more expensive, nice quality pans. Although I love to cook and sear foods, I am terrible with any pan that is not non-stick. I finally accepted that any pan I use must be nonstick, so it's been a process of trying different pans and brands to get the right ones for my needs. I was happy with the brand of pans that I found and had been using for the last few years. They are ceramic nonstick, and this is important to me because I want pans that are also safe. I say that I WAS happy with them, because then I tried these pans out, and WOW!!! I didn't expect the pan to be any different from the others that I've been using. After all, they are stainless steel, expensive, from a good company, and they do well keeping their nonstick coating even for a couple of years before I need to replace them. They are even of a similar weight. But these Viking pans, they brown and sear food like it's their job to make a perfect meal (and to be fair, it is). I never knew that a nonstick pan could do such a beautiful job of browning and searing food, but this one does. Going forward, THESE are the only pans that I need! I got the 2-piece, 9.5", and 11" sizes, and the sizes are perfect for pretty much everything. The pans are heavy, well-made, and durable. The interior nonstick coating is wonderful, and it is absolutely nonstick. These pans are heavy because they are made with layers of stainless steel, and they do a great job of heating all the food evenly. When I was reading the brochure and guarantee that some with the set, it didn't mention any issue with the use of olive oil in cooking, but I use only ceramic interior pans, and other companies have mentioned that using olive oil to cook will create a sticky residue. I will continue to avoid cooking with olive oil, because I want these pans to last! It does say to avoid the spray oils, and this is good advice, regardless! The best oils to use when cooking with ceramic pans are avocado, coconut oil, or butter. They all work well with higher heat and don't end up leaving behind any residue that can make the interior less nonstick. Also, it's best to use wood or silicone utensils with this type of pan so that it doesn't scratch, and also hand-wash them after use. I've found that this type of ceramic, nonstick pan will easily last for years if care is taken with it. I'm glad, because now that I've tried these, all my other expensive pans are a distant second, and these are the pans that I'll be using from now on to create amazing, seared dishes. With nonstick cookware, imagine that! The set of pans is currently priced at $175.99. After working with these for a few days, I can absolutely say that these are worth the price. They cost more than the ones I was using before, and they are in a similar price range, but there is no comparison. I'd say that these are top of the line, and I'd be surprised to find any others that work as well as these do. I have a lot of experience and have used most of the major luxury brands, and these are the best. Clearly, I love them, and they are worth the investment because the dishes that I've made with them have taken my cooking to the next level. Even my husband commented on how amazing the food is.
