Finally a non stick, induction ready omelet pan that works
The first one received had finish defects, the non stick coating had rough spots and the center of the pan was not exactly flat. I received a replacement and it was as expected, the surface was smooth and the bottom was flat. Since I switched ti induction several years ago there has been an absence of a real non-stick pan in the 8" range that was affordable and durable. Since the coating is not designed to withstand high temps it is perfect for egg cookery. The induction plate on the bottom of the pan is sufficient for evenly heating the pan. Don't use cooking spray, only use oil or even better, use butter. Contrary to what Anthony Bourdain once wrote about not washing non-stick pans and just wiping them out, yes indeed you should wait until the pan is cool and Clean it with dish soap. You can also use barkeepers friend on the bottom only to keep it looking close to new. The silicone handle grip is an added bonus. The shape of the pan makes it easy to flip the contents of the pan.
