I spent a lot of time researching knife sharpening, and it seems like this specific type, aka the pull-through double disk style, is the most convenient way to sharper a kitchen knife without damaging it. It is not a replacement for a true complete sharpening as claimed by a Work Sharp employee on some podcast, but you can get away with just using this for the kitchen needs. Same goes for the quality of the sharpening, sharp enough for the kitchen needs, but not sharp enough for the arm hair test. It works in a completely different way than a carbide V-shaped sharpener, and removes only a very tiny amount of metal. It doesn't seem to require cleaning, but I wish there was an easy way to do it, since you can clearly see the disks getting darker. Compact, fast and easy to use. Great price. Read more
