I have been using some other whetstones for years now and they work fine for a fraction of the cost and was wondering why anyone would spend 5x to 8x more for these. I needed to sharpen more knives over the past year and it started becoming a chore. A friend from Japan recommended these so I decided to splurge this Christmas. I tried them and I spent more time soaking them than sharpening the knives!! I don’t think my technique got better. These stones seem to work really really well. I don’t fully understand what the differences are that make this work so much better and faster compared to the $30 to $40 ones I bought many years ago. Read more
Used it once so far. The resulting edge was extremely sharp BEFORE stropping. Edge is also mirror-like. Very pleased. Will buy more of these stones. With these modern whetstones you get what you pay for. I feel I got my money’s worth and more. Addendum: I have been asked by a knifesmith and a blacksmith why I keep my knives as sharp as I do. My answer, because I can and want to. A few co-workers refuse to even hold them. I have the complete set of Yoshihiro stones and will soon start collecting their knives. Unfortunately I had to retire due to my health but now I have the time to sharpen. Slow, steady and deliberately. I can use a jeweler’s loupe to see the trees across the street in the reflection of the edges of my knives. Thank you Yosihiro. Read more
I have four of these stones along with two Shapton and another splash and go stone. Bought a two sided King to learn on as well. I’m not sure why Burrfection videos do not include these in their reviews. These are the absolute, unequivocal best whetstones. They do require soaking, but develop a slurry which gives you nice sharpening action and feedback. They are permanently mounted to a base. I like these above all that I have. They are a few dollars more, but don’t dissolve when left in water and are big and thick enough to last a lifetime. Highly recommended. Read more
I have owned quiet a few brand of whetstones but these are by far the best ive ever had but the should be when you look at the fact that the cost for all 3 about 4 or 5 times more than a set of the other stones ive had but I have very high quality knives so I though I should have equally high quality whetstones. Ive used these a ton already they are holding up well I sharpen with a mixture of Japanese and western styles utilizing the scrubbing motion of the Japanese style with the sliding motion of the western style so the stone gets word pretty evenly which makes it so I dont have to smooth is out as often saving the stones from getting more worn down. The get my knives absolutely razor sharp to the point where even my cheaper knives cut through paper with little to no resistance. Great stones and the perfect set would make a great gift for any knife enthusiast who doesnt have as high of quality stones or if your like me and just want to have razor sharp knives. Read more
I did a lot of research before buying this Japanese water stone. It's just right to put a razor sharp edge on my chef's knives. What a difference it makes to have an edge like that for cooking. It's large and heavy and that's what I wanted for stability. I like the way you submerge the whole thing in water and when the bubbles stop coming out it's ready for use. Great stone! Read more
I bought this whetstone over several months ago and have been slowly learning to sharpen my knifes to the best shape possible and this stone will gladly help you achive that! While it is a bit steep for a regular person or user and might be much better off with other brands to begin with... For a hobbyist these stones really could not be any better! if your looking for a gift for any aspiring chefs or a wizard in the kitchen then these would be the standout choice! The price is very steep but the stones quality is phenomenonal and provides consistent results, just be sure you know what your doing and the stone will do the rest! Read more
After a little bit of a learning curve, i.e. Muscle memory on angles and motion, this is now my favorite sharpening method. My suggestion to any buyer is to make sure the stone and wood base is fully dry before putting it away or back in its box. I didn't do this the first time around; I towel dried it and placed back in the box. The box and wood base got moldy. Second suggestion is to get a secondary sharpener/tool for your serrated knives.
