I purchased these dried beans and started cooking a batch the day they arrived. I soaked them overnight, and cooked them about 25 minutes, they turned out soft but not mushy, retained their color and shape, taste about like a pinto bean, but my research indicates this is one of the most nutritious beans, so why purchase a lesser bean? The bag is sturdy and should keep the beans quite fresh. Fresh, easy to cook, good taste, excellent nutrition, good color and texture.
