I finally decided that it was time to make my own vanilla extract. I was no longer comfortable paying what the grocery store was charging. So, I bought a bottle of my husband’s favorite ‘cheap’ whiskey, added half the package of beans to it, recapped the bottle and stuck it in the back of my cabinet. After 8 weeks, I pulled it out to take a look. The color of the liquid had significantly changed and the smell was amazing! What I Loved: Amazing fragrance: The instant you break the seal on the package you are hit with the sweet buttery vanilla aroma. Moist & Pliable pods: The beans are soft and packed with caviar – exactly what you want when making extract. Balance of quality vs. value: Organic, non-GMO packaging, plump beans – perfect for anyone serious about real vanilla. I used it in some pancake batter at the eight-week mark and it was just as good as the store bought. I decided to leave the beans in the bottle and just see how much better it can get. This means that for less than $40 usd I have just under 60 ounces if vanilla extract that will continue to get better over time. And I still have about 12 beans to use for other purposes. (Be sure to appropriately seal and store any left overs.) This means it cost me under $0.70 usd per ounce from organic Madagascar beans and whiskey from a manufacturer I trust. The cheapest I can currently find as of today for similar is $4.50 usd per ounce. Things to remember: Vanilla Beans are from a plant. No two beans are alike. The bean size and plumpness will vary. Be attentive to the grade of beans you purchase. These are Grade B beans, some will be slim or even split – That is normal. Takeaways: Whether you are crafting homemade extract, making an infusion, vanilla sugar, or enhancing the flavor of a dish, these beans are stellar! Plus, they are organic, vacuum-sealed for freshness and – dare I say – add a little luxe to your pantry without breaking the bank. Good product for price but very small beans compared to other quality suppliers. It would be nice if they would disclose how many ounces are in a package so that customers could purchase the correct quantity of beans needed per fluid ounce of alcohol. Read more

I make my own vanilla using these beans and it is the BEST! These beans are very moist, super fragrant, and a decent size. I typically use about 25 beans (sliced lengthwise and cut into 1/2 inch pieces) in about 750 mL cheap vodka (COSTCO brand works the best, don't waste your $ on expensive vodka as it makes no difference). Let it steep in a cool, dark place for 3-6 months (shaking periodically) and you will have some of the best vanilla extract out there! Read more
