This is the expected quality of an All-Clad skillet. I use it in an induction cooktop, and the heat distribution is very good. The non-stick coating allows release even molten cheese. The edge of the skillet is more gradual than some of their other skillets that have an upright profile making flipping contents difficult. I am very happy, but still expect the non-stick coating will lose its mojo in a couple of years. Read more

Wife wanted a larger fry pan for her 20 year old D3 (3ply) Allclad set. I upgraded her to this D5 (5 ply) model. You can see and count the plies on the pan edge. I’ve included a photo of one of the old pans - you can see the non-stick finish looks different - age, of course, but the new pan has an almost metal flake appearance in the finish, whereas the older pan has a flat even finish rather than a shiny metal flake look. But both pans work well. The five plies on the new pan do seem to distribute heat evenly - an especially important feature since this pan is so large. We cook on an induction range, and the Allclad pans are perfect for this use. This is a heavy pan, and somewhat hard to handle - for instance flipping it upside down with a plate cover is difficult. But with the correct handgrip, it becomes much easier. I researched this point and have included photos of the standard (wrong) grip, and the correct grip. Use an underhand grip and curl your fingers into the slot on the handle. This is called a ‘chef grip’. It can feel odd at first, but practice makes perfect. You will not regret any Allclad purchase - they are meant for a lifetime or beyond. Read more

Last year I installed an induction cooktop during the remodel of our kitchen, and saw a lot of recommendations for the All-Clad D5 cookware as the best option for cooking with induction. All-Clad is just out of my price range for a full set, so when I had the chance to take this fry pan for a test drive, I jumped at the chance! Pros: - Heats faster and more consistently than my other frying pans do. I know that this sounds weird, but with the All-Clad pan, I can use a lower setting on the induction and get the same results as I do with a higher setting on my other pans. Noticeable when caramelizing onions for example. - Less spatter. Because the pans are heating more consistently and I can use a lower heat setting, I get less spatter when frying food with the All-Clad. This is important because getting/keeping the ceramic surface of the induction cooktop pristine is a task that is both tedious and challenging. Less spatter = less oily residue = less cleaning effort and grief. Big win in my opinion. - The 10” pan is literally within 4 grams of being as heavy as my 12” fry pans. I assume that the weight is a direct result of metal content, which in turn is responsible for the quick and even heating I experienced. - Similar to my other new/modern non-stick cookware, the All-Clad was entirely effortless to clean. A little hot water with a good grease cutting soap and you have a food-safe pan that is ready to use again with a mere swish, wipe and dry. - Handle is comfortable, angled away/more distant from the heat source than my other handles Cons: - The handle and external finish are prone to showing water spots. This means that they have to be wiped dry (not air dried) to avoid spotting. Note that I have great tap water and water spotting is a rarity with our water. - No “helper” handle on other side to use when pouring or serving food - Price. These pans are priced outside many/most cooks budgets. Overall: I enjoyed cooking with the All-Clad pan, but I feel like the hype around their brand is overstated. They are nice pans, and have some high quality features, but they also stop short of providing fantastic features (like welded/integrated handles) that would further set them apart from every other pan on the market. 4* from me because I liked them, but the pans did not exceed my expectations.
