Over my many years as a food allergy parent, I have come to realize that commercially produced, real dairy ice cream sandwiches that are safe from any possibility of cross-contamination with my son's allergens are simply a unicorn that does not exist. These molds make it possible for me to make some he can have, which is so huge! We do already have an ice cream maker, so I pre-made a batch of vanilla. Then, I had to find an ice cream sandwich cookie recipe online that didn't use eggs, since the only cookie recipe included features eggs quite heavily. Made the dough. Used the cookie molds to form and bake the cookies. Then filled them according to the instructions and clipped them together to freeze solid. Super straightforward. And let me just tell you: they turned out AWESOME. Seriously, so good! My son was SO stoked to try his first ice cream sandwich! That made all the prep and all the steps totally worth it. Huge win. I do think the recipe book is a big missed opportunity. I'd bet that lots of folks looking for a product like this are doing so for food allergy reasons. So it would be nice to see some more "free from" recipes. Especially for the cookie part. The molds themselves are great. I wouldn't say this is easy or simple to use, more that the process is very straightforward. I do really like that they clip tightly together when fully assembled so you can freeze everything solid while it's as compact as possible. I had the best luck just smashing the dough into the cookie molds with my hands, but the included spatulas came in handy for leveling out the ice cream. Overall, super pleased with these. Any time I can make my son a "normal" treat he otherwise wouldn't be able to have, I feel like a million bucks. These help me give him one of my favorite treats, and seeing how much he enjoyed them made all the steps totally worth it. Highly, highly recommend these. Read more
