This pan is amazing. Cooks food perfectly. We slowly bring it up to temp before adding food. Unless of course it's bacon. Then we put it in a cold pan and bring it up to temp together with the pan. There is an occasional piece of food that sticks, but nothing that won't scrap off easily. As the seasoning in the pan gets better I suspect it will happen way less to not at all. Please note, this pan is heavy. A bit lighter than cast iron, but definitely heavier than stainless steel. It is also oven safe. It should last a life time with proper care. Read more

Exceptional manufacturing quality and performance. Used appropriately, this carbon steel pan does a fabulous job of searing or oven roasting meats and fish; sautéing or roasting relatively dry vegetables like onions, peppers, green beans, and squashes; and cooking the best eggs and hash browns ever. Those who complain about "stickiness" after seasoning may be using it in ways that can remove the seasoning (see below). If you want to get away from toxic non-stick coatings but want a pan that can acquire equivalent non-stick properties with natural seasoning, carbon steel is the ticket, and this pan is the Rolls Royce of carbon steel. It is built like a tank. It weighs more than my 10" cast iron. Unlike other De Buyer Mineral B pans, the Professional line features a non-coated stainless steel handle and helper handle, which means that it is oven safe. The helper handle is handy for removing a hot pan from the oven and for pouring cook content out of the pan, but if you are looking for can maneuver easily with one hand, I would suggest looking for something lighter. You must serious enough about cooking to be willing to learn about and apply techniques for applying and maintaining good seasoning. These pans are not suitable for long simmering, especially of acidic foods like tomatoes, or any but brief deglazing with wine or vinegar, which will remove the seasoning and render the pan "sticky" again. There are many good videos on YouTube that will help you to to learn to season, clean, maintain, and love carbon steel pans. The surface of a well seasoned pan bears little resemblance to the satiny silver of a new pan, but is beautiful in its own right, as you can see in the photo. Read more

The pan is not flat. Cooking oil runs to the outer edge of the pan leaving no oil in the middle. Thus getting a proper seasoning on the pan is very challenging and food sticks because there is not enough oil in the middle of the pan. Additionally heating is uneven on induction because the pan doesn't sit flat on the surface. Read more

I have an induction range which can damage Carbon steel so I went heavy on purpose. Waiting on a gas Hob for outdoors to season this and some reseasoning of Cast Iron. Let's face it seasoning makes the house smell bad. More to come in this review as time permits. More reviews to come so far impressed by the thickness and weight heavier than some cast iron, gonna be a winner methinks. Read more

An excellent all around frying pan. Might be too heavy for some people but it has helper hand. Being heavy the problem is washing it.. But unless there is something stuck/burnt on the bottom, best practice would be to wipe it to rinse it under cold water, rub it dry , wipe a thin layer of oil inside and out, wipe it dry again and hang it on the wall. It will outlast your kid's kids and then some. Before next use, rinse it under warm water, wipe it a bit dry, heat it on the stove until dry and use it for your favorite recipe. But the learning curve is a bit steep. Read more

Great pan. I bought a lesser brand first and it warped during seasoning. Bought De Buyer pan. Seasoned easily. Cooks evenly and non stick. Cleans as advertised. I’m very happy with its performance. Worth every penny. Read more

This is an excellent pan. It was very easy to season, making it non-stick (so far, nothing has adhered to the pan). Heat distribution is excellent, probably due to it's 3 mm thickness. That thickness does have a drawback: weight. If you are considering this pan thinking that it will be lighter than a cast iron pan, look elsewhere. it is heavier than my equivalent sized cast iron skillet. Read more

Only gave an overall 4 star because I expected and wanted the pictured frypan with 2 handles because of the weight. The pan I received only had 1. Suggest the seller remove the 2-handled photo if that is not what a customer will receive. We decided to keep the pan because we really wanted to start using it. So far, we are pleased with the quality and the functionality of the pan. Read more
