Good for knives, maybe not for scissors.

The old adage says a dull knife is more dangerous than a sharp knife, mainly because a dull knife is prone to slip and cause a knick or two to your hands and fingers. Therefore a good knife sharpener is a smart thing to have around the kitchen. There are many hand-held sharpeners out there at a much lower cost. I question if an electric sharpener is worth the extra money. Obviously, it will save the user a bit of elbow grease as this machine has beveled slots which allow the user to place the knife at the correct angle. Setting the knife at the correct angle is important the goal of a sharpening a tool is to form a micro-chisel edge on the blade by passing the knife on both the right and left sides of the blade. Take too much off of either side and the cut is less than ideal. The instruction booklet recommends passing the blade through slots 1->2->3 in succession, sharpening at each slot for 3-5 times on each side. If the knife was extremely dull the process may have to be repeated. The machine has 3 speeds, low, medium and high and the instructions tell which speed is best for your particular tool. Low speed is recommended for ceramic knives. Medium or speed is for a straight blade knife, scissors, meat cleaver, a chop bone knife or a sushi knife. A forged knife should be sharpened on high speed. Serrated knives use only the 3rd slot. The scissors sharpener is a bit more difficult to use because there is more guesswork involved so the results were less clear which is why I could only give it a 4 instead of a 5. The instructions say it can be used for “garden scissors” or a hand axe, although I think I would still prefer doing that by hand with a whetstone. Read more

I picked up the Psythuor 4-Stage Electric Knife Sharpener because I needed something to keep my knives sharp — I cook regularly and go through about 8 different knives, from paring to chef's knives. I've used electric sharpeners before, so I knew what to look for. The setup is straightforward, plugged it in and started using it right away. The collection tray for metal shavings is handy and keeps the counter clean. Stages 2, 3, and 4 work really well for routine maintenance — I use them almost daily and they keep my knives sharp enough for all my prep work. The 20-degree angle guide is consistent, and the non-slip base keeps it stable on the counter. For regular touch-ups between cooking sessions, this sharpener does its job nicely. The main issue is with stage 1 and the motor power. When I insert a knife, especially on the first stage, I can feel the RPMs drop, and the motor struggles a bit. I tried restoring a really dull knife and got an uneven edge in one spot because the motor bogged down during the pull. Also, the guide slots are positioned close to the body, so my larger chef's knife bumps against the edge where the bolster meets the slot — not a dealbreaker, but annoying. If you're mostly doing light maintenance and working with smaller to medium knives, this is a solid choice for the price. Just don't expect it to handle major restoration work on bigger blades.
