Apex 10"hybrid fry pan is really great. Feels solid. 3 ply stainless steel, infinite 8 (diamond infused) nonstick ceramic PFAS FREE..of course the etched apex pattern tops it off. I tested it right off by making an omelet & fried eggs with a tiny bit high temp oil. The eggs slid out of pan easily using a metal spatula which worked great. Heat was evenly distributed. *Cleaning the pan was oh so easy! I am very happy with my purchase. Let's be honest. If you have a good stainless or carbon steel skillet and take the time to preheat and oil it, they're pretty close to non-stick. However, we all grew up with the convenience to Teflon for frying eggs and fish and love the easy use and clean-up. Now that we know PFO/As are a health and environmental nightmare, we need alternatives. Ceramic has promised a safe class of coatings, but the budget versions are prone to cracking, chipping and very limited life. So you can buy a new $30 Carote or Caraway every year or you can invest in something that might go 5 or more. This takes you into the territory of GreenPan, OurPlace, etc. I did a ton of research and settled on this model - and I am not disappointed. It has the heft of quality construction without feeling heavy. The skillet profile is less tapered than many models leading to a generous cooking surface. The patterned base gives you the best of both worlds. The raised stainless steel pattern protects the ceramic coating from wear and tear while also providing a surface discontinuity that further prevents sticking. With just a tiny spray of oil, the skillet is so slick that you struggle to catch and flip fried eggs. With more heat, you can easily put a sear on a piece of fish or chicken. I haven't thrown it in the oven yet, but it's rated for that and certainly appears like it would handle it with aplomb. It's definitely worth the premium over the cheap brands and a great value vs the high-end ones - GreenPan really hit the sweet spot with this one. Read more

So far the nonstick is excellent of course right out of the box but as you can see from this pic there’s a layer of something that comes off the top layer coating which doesn’t look so healthy. And when I emailed the company asking what the powder is their response is "I am very sorry for any issues with your new Amazon purchase" and no explanation what that stuff coming off was. Read more
