Ever not wanted to write a review because you don't want to share your secret worrying that if people know the price will go up? Well Matfer bourgeat is my secret. They are hands down my favorite cookware. I bought all my kids this particular saute pan. I have mauviel, I have time line, stianless line, hammered pieces, all clad copper core etc etc but Matfer bourgeat is my favorite. I have found myself using this piece even more than my favorite le creuset braiser. There interior is completely smooth making clean up easier than mauviel which has tiny ridges. The curved edges make pouring easy without any mess. The copper is nice and thick. The handles are well balanced. The copper is easy to keep shiny with bar keepers friend or copperbrill. I shine mine up about once a month. The only con to matfer bourgeat copper is the price of their lids. I have not been able to find a universal lid that works with this pan. Read more
