Cuts like a knife

This is the third knife I’ve purchased from Mercer Culinary, following my Santoku and Chef’s knives—and I have to say, this bread knife is my favorite so far. It slices through bread effortlessly, like a knife through... well, bread! The serrated edge is razor-sharp, giving you clean cuts without tearing or crushing the loaf. The handle is ergonomic and comfortable, offering a secure grip even during longer prep sessions. Like other Mercer knives, it comes with a Limited Lifetime Warranty, which adds real value. The build quality is top-notch—solid, well-balanced, and clearly made to last. The undisputed champion of my barbecue kitchen!

During the summer I purchased a pellet grill and immediately started experimenting with new cooking methods and preparation techniques. My wife was getting increasingly irked at my use of her expensive set of knives and frankly I wanted to pick up something that I didn’t have to worry about damaging or ruining in some way while learning. I had a one knife budget and wanted something that could do everything, after some research I realized a chef knife would fit the bill. I looked at several before deciding on this one, basically the cost of this knife plus a sharpener with good reviews was still about half of the next closest competitor. This knife also came in red which I liked as it was easily differentiated from my wives set. This this is the right size and shape and was delivered sharp. This knife seems to be a good weight and the grip is easy to hold even when wet. After sharpening this thing really shines though. It holds an edge exceptionally well and can sharpen to a scary edge. Using a quality sharp knife I have found it easy to trim my briskets and slice my vegetables. The shape of the blade lends its self well to both tasks. I ended up picking up a cake knife to accompany the chef in my arsenal as well as some quality sheathes for both to keep them safe in storage. Overall both knives are well made and a great value for the money. All told the two knives, the sheathes and the cheap sharpener still came in under the total cost of my wife’s chef. I think mine out preforms hers and I actually catch her going to mine if I’m not looking. For the price, go for it. These things are great quality at a fraction of the cost. Read more

Blade sturdy, thin, sharp carbon steal blade

Mercer is a good Professional knife. This is an excellent sharp bread knife, carbon steel. The blade that can be sharpened easily but keeps a sharp blade for a long time. I perfer carbon steel over stainless steel. Keep the knife dry when putting it away will keep the blade perfect without rusting . The blade is thin but stiff and the price is very good. I am a wood carver and do 3 dimension cavings. My chisels are razor sharp to cut through wood, so handling knifes without getting cut has become "second nature". At the beginning I did get cut mostly by getting "too relaxed". With pratice you become relaxed but aware and focused when using this knife. Blades cut quickly and easily... a deep wound can bleed freely. However being sharp can also keep you from getting cut by not slipping. You can wear gloves that will prevent cuts when using knifes.
