My Favorite Knives
We have had these knives for six months. I wanted to see how they lasted before reviewing. They are simply wonderful. I hate dull knives. These knives really hold their edge. I usually use several stones to keep knife edges, but I decided to test whether a Work Sharp sharpener would be sufficient. I figured most people use machines to sharpen so it would be a better test to report. The Work Sharp puts a very fine edge on these knives, and the edge really holds for many uses, even cutting on a hard plastic cutting board that is tough on edges. So even if you don’t know how to use sharpening stones, you can keep these very sharp with machine sharpening. What one can’t see from the photos is how ergonomic and comfortable the handles are. I do lots of chopping, and the bigger knife is more comfortable than any knife I have ever owned. Plus the handle shape makes cutting with finesse or fileting easy. I have bought and used far more expensive knives. These have become my favorites. Only five slots in the holder so they stand alone, but it is a high quality and good looking holder.
