This is an excellent sharpening/honing steel,. Note this is not just a "straightening" steel, like the steels typically bundled with knife set blocks. Instead of a straightening steel, I use this honing steel on my knives regularly to ensure my knives maintain a very sharp final edge. I have really come to like the M. Sakari brand. I purchased their culinary shears recently and was struck by their quality and heft. I went with their oval diamond sharpener and once again I am thrilled with the build quality of this piece. Packaged beautifully and with pride by the company. This is clearly not your ordinary grade sharpener/honer they throw in with your typical big box knife set. I recently purchased a professional Japanese set of VG10 steel knives and wanted a sharpening steel that would compliment their quality; I’ve no doubt this piece will perform and will likely outlast me. I typically have at least one gripe about any given product. But. Not this one. My current knife set is new and already razor sharp. As an initial test I took out one of my dull old backup AJ Henkel 6 inch utility chef’s knives and within about 45 seconds of swipes, it put a formidably sharp edge on it, ready to make quick work of vegetables. This is an awesome honing/sharpening steel. Buy you need to understand what you're buying. This is sort of a midpoint between a standard honing steel and a sharpening stone. With the diamond coating, it's much more aggressive than a standard honing steel. But it doesn't replace a quality set of sharpening stones. This will definitely put a keen edge on a blade that is slightly worn. But for "real" sharpening, you still need to use stones.l, either natural or diamond. This rod is really best for professionals or people who are serious home cooks. I'd suggest that you first learn to use a sharpening stone and non-diamond honing steel. Once you do, you'll really be able to appreciate what this diamond rod can do. Read more

I was in my 70s before I learned that the round knife ‘sharpener’ that comes with your set of knives is not a sharpener at all. It is a tool to remove burrs that can appear on your blades over time. Burrs are simply indentations in your blades. If you looked through a magnifying glass, you’d be able to see the misshapened edges of your blades, usually caused by some unintentional abuse of your knives—maybe from a cutting board or some material that is not meant to be cut. This diamond-encrusted tool IS a knife sharpener. It works beautifully, and you will be thrilled how much sharper your blades can be with just a few swipes of this sharpener. There are videos on YouTube that describe how to use diamond-encrusted sharpeners, but really, it’s not that complicated.
