First off, I want to say I've been sharpening my own knives and the knives of others semi-professionally for years now. It's not my full time job and I don't charge people to do it but I have a lot of people I do it for and I could charge if I wanted to. I have very expensive resin-bonded diamond plates as well as expensive polishing whetstones combined with diamond spray strops. I get my knives as sharp as or sharper than a razor. With that said, I was interested to use this as I've always been curious about these kinds of sharpeners and it would be very nice to sharpen some of my knives without the work of using whetstones. First impressions is that it is very sturdy and well built. The quality of the sharpener overall is a 10 out of 10. The instructions are even engraved on the bottom of the base plate, which is a nice touch. It means I don't have to hold on to a direction booklet to remember which position does which action. I used a cheap knife at first that was already fairly sharp but wanted it touched up a little bit. The first thing I ran into is that you don't get to choose your angle. If you're going to use this sharpener, it's going to be whatever angle this sharpener is at. Secondly, this has the same flaw that all pull-through sharpeners have and that's the problem of scraping the knife to sharpen it. You're literally scraping a "V" into the blade of the knife and you can only do that for so long before the knife loses the ability to be sharpened, at least sharpened in that way. After scraping the edge with the sharpening action, trying the honing action, and then the polishing action, I tried the paper test and while the edge feels sharp, it won't cut the paper. I even took it to the strop and it just wouldn't cut the paper. It leaves such a gnarly burr that it works against its own sharpness. If you're someone that doesn't sharpen knives and wants something quick and sturdy and you just need a moderately sharp knife then this will probably work for you and be sufficient. If you're someone that sharpens their own knives and wants that razor-sharpness, this won't cut it (pun intended). I will give this a couple more tries just to make sure but I won't use it on my good or expensive knives. If I figure anything else out I'll come back and update the review if I've discovered I've been doing something incorrectly. Edit: so I've actually gone back and used this thing again. I purposely and completely dulled a decent knife to check it out. I provided a picture and you can see little shards/particals in the picture. Those particles are slivers of metal, again because it is scraping the metal away. After trying it again and really giving it a good go, I was able to get the knife pretty sharp. I was able to get it to pass the paper test. What has completely changed my mind about this sharpener is it's ability to sharpen odd shaped knives as well as serated knives. I have a knife that has the blade curved inward, like a talon. It's very difficult to sharpen, especially with a whetstone. In fact, I normally have to use a very thin whetstone to sharpen it but this sharpener sharpens it very well, very quickly, and with ease. I have added a star to this review. I originally had the review at 3 stars and I've increased it to 4. I think I'll keep this around for serated knives and odd shaped knives. I would still shy away from using it on more expensive/high quality knives. Read more

I'm not a chef, I'm not even a great cook, but I'm not terrible either! My knife skills could use a lot of help but the skills that I actually DO have has taught me that sharp knives are critical. I don't need to shave with a knife or skin an animal but I do want sharp knives in the kitchen. I've read that dull knives contribute to accidental cuts, I think that's probably true from my experience. In short - I'm just a normal dude that cooks at home and I want sharp knives. This thing works great for me, it keeps my knives sharp and it's simple to use which is also a sweet spot for me! Read more

This is a serious knife sharpener! What I mean is it starts grinding away at the edge within the first few strokes. I'm not an expert when it comes to sharpening knives but this seems to do a very good job. My one complaint is the fact that you have to hold the base steady with one hand while you draw the knife through with the other. That means you have to be very careful! Make sure you're working on a flat and sturdy surface with no distraction while you work. Probably a good rule of thumb anyway. Read more
