This is as close to perfection as I have seen in a bird's-beak knife in more than three decades of professional and home cooking. It is wickedly sharp right out of the box. I mean sharp as a razor. If your knife skills are limited, be careful. The shape of the handle is Shun's idea of perfection and I must admit it works well, especially for a right-hander. The handle is longer than most, an advantage for both balance and control. Maintaining the edge of a curved blade like this takes a bit of skill. If you aren't entirely sure of yourself, ask a more experienced friend to show you how to do so. It would be a tragedy to damage the fine edge of this little work of art. The downside? Like all Shun knives, it is insanely expensive. Still, you get what you pay for so go for it. Read more

This is one of my favorite Shan knives and I have the full set. This really works well for doing small work like cutting out the cores and vegetables. I would buy this knife again if something happened to my current one I must for everyone to have. Read more
Different cooks will require certain types of knives, and one knife I can't do without is a bird's beak peeler. I use it for peeling eggplant, Korean melon, turnips, and also for slicing cherry tomatoes in half. I previously had a Wustof Classic bird's beak which was a very good knife, but all my other knives are Shun, and I can feel the difference. I have the Shun honing blade, which if not careful can make non Japanese knives dull. I gave the Wustof away and bought the Shun. The Wustof was sharp, but the Shun is even sharper. Someone other than me opened the package and cut themselves, so be careful when opening the box. The knife itself is enclosed in cardboard. Some other Shun knives I have bought had a cheap plastic cover. These knives are best stored in a block or magnetic strip and should never be washed in the dishwasher. A non abrasive sponge or natural bristle brush with some soap & hot water should do the job. Read more
Love this knife. Expensive but the best paring knife i’ve used. Bigger than listed. Wish i had time to take a photo but i have 3 babies. This blade words for golden kiwis to big fuji apples and asian pears. It is the right size for almost any fruit you plan on using a paring knife for. Not too small. Read more
