I am an avid home cook, and bought this product for maintenance of my knives. Right out of the box, it met all my expectations. It worked very well and quickly, my primary concern. It worked with all my knives, and was easy to use. If you have an extensive collection, and are serious about using and properly maintaining your knives, you'll love this sharpener. Do take the time to read and learn how to set it up and use it... It is expensive. If you have just a couple of knives you use all the time, have someone sharpen them for you. You'll come out ahead. I'm just your average Joe. I enjoy cooking, grilling, slicing and dicing. I have used many sharpeners through the years and decided to treat myself with something that will last me the rest of my years. This sharpener has an easy learning curve. Just takes a couple of tries. I really like the fact that it doesn't take up a lot of my time to have super sharp tools in a short amount of time. The simplified jig system and dry-operated diamond wheel and rubberized stropping wheel make it extremely easy to quickly achieve a professional quality edge on knives that fit within the sharpener's design specifications. Be advised, though, that some higher end kitchen knives are thicker than the 3.5mm maximum specified for the T-2. They will not fit without modifying the plastic jig guide, which is not a manufacturer recommended procedure. Personally, I wish Tormek would offer an accessory jig guide for thicker knives. The jig guide can be easily swapped out and costs around $10 delivered, in case anyone wants to buy an extra and try his hand at home modification. It should also be noted that, since the jig is in contact with the sides of the knife, it WILL scratch your knives. This is from some of the metal grinding dust getting trapped between the jig guide and the knife. Using the included paper jig guide liners greatly reduces this tendency. Any resulting fine scratches, though, can generally be polished out using a suitable metal polish. If your knives are exceptionally dull and/or need to have their edge geometries reshaped, you should probably get the accessory coarse diamond wheel. The 600 grit fine wheel removes very little material per pass. This is good for knife longevity, but ill suited to edge reconditioning. The T-2 works best when maintaining knife edges rather than restoring damaged ones. All told, the T-2 allows anyone to quickly hone most kitchen knives to better-than-factory sharpness in less than five minutes without any special training or extensive practice. It seems well adapted to the needs of its intended target market -- commercial kitchens, etc. I use it in my home as a hobby chef because of the convenience it offers. I can sharpen any knife at a moment's notice, eliminating the need to either send them out for days/weeks or to engage in any tedious setup for a less optimized sharpening system that would also require practice to use effectively. I might yet purchase a T-4 or T-8 to expand the scope of what I can effectively sharpen at home, but the T-2 is the best option for routinely keeping my kitchen knives sharp. Read more

I purchased this Tormek 2 and sharpened about 20 knives the first time. Every single knife was razor sharp. Was pretty pricey but definitely see this industrial machine being used by my children when they acquire their own houses and knives. Again very pricey and I will cry for a little bit but will never have dull knives again for the rest of my life. Read more
