I cut meat for a living and I've tried blades twice as expensive as this Victorinox but this knife won me over because it's got a good blade that holds a decent edge and the handle is easy to grip even when my hands are wet. Polished wood handles look nice but they are not practical if you cut volume. I go through a new butcher's knife about once a year and my last 3 purchases were this exact knife. Read more

The quality of Victorinox blades is well known, so I am not going into that. I am going to review the other aspects starting with the fibrox handle. I have large hands and the handle fits very nicely, it is well designed for ergonomic function. The added benefit is the nonslip design. Meat is wet and fatty and this knife feels like it is glued to your hand while cutting. (ALWAYS use a cut resistant or stainless steel mesh glove while cutting meat. Did I mention ALWAYS) The blade is sharp, it is 10" long and 1 second of distraction could lead to your blood in the meat and a trip to the ER. The Granton edge works great because it helps the meat release while cutting, this allows you to make smoother cuts with less effort. As a test I used this blade to slice rare prime rib. It was like slicing butter. If you are looking to get a good starter knife, this would be one of the best universal blades you could purchase. It is stiff enough to cut large pieces, heavy enough to make smooth cuts, but well balanced so you don't get fatigued using it. Sharp, sharp, sharp. Well-made and easily cuts large pieces of meat. It also slices meat cooked or uncooked with ease. At first, I didn't like the look of the handle, but it feels comfortable and serves its function. Overall, a great knife and highly recommend, especially at this price point. Read more

I’m a butcher and all of my knives I use currently are Victorinox but they don’t have the granton edge so I’m slowly replacing them. Victorinox is a great brand and very commonly used in meat shops. They can be a little pricey but will hold a nice edge when you make sure to keep them steeled and will get the job done. Their handles leave something to be desired and can get a little slippery if you let them get gummed up. This knife showed up with a different looking handle than the one pictured but it’s really not all that important. I didn’t buy this knife for how it looks, I bought it for work. I have yet to use it but I’m sure it’s going to be just fine. I’ll update my review if it’s not. Read more

I had a terrible time trying to spatchcock a huge turkey - I could not break the breastbone even with my full weight on it or my other knives. This stupid turkey even broke my good kitchen shears, made for cutting poultry bones. Cue to me punching the turkey breast like I’m in a sitcom or maybe a horror movie, losing ground to indestructible and definitely haunted turkey. I gave up and was about to put the turkey into the oven without flattening it, when I remembered I have this sword. Hacked into the turkey breast bone like I was using a machete in the jungle (the 12-inch knife is almost as big as a machete). It worked. Bought 8 years ago, moved across the country twice with no damage despite it cutting through packaging trying to escape. This sword, not the turkey. Definitely recommend the sword. Possibly never eating turkey again. Read more

Did not receive this Victorinox Cutlery 10-Inch Butcher Knife, Black Fibrox Handle, but I have used this knife in my sister's house more than once, and since it is in the waiting list of items to be reviewed, and probably remain there if I do not post a review, these were my impressions on this very sharp knife. Last year we were cutting a 10 LB piece of Rib Eye, that thanks to this knife, became the easiest task to cut the desired thickness with absolutely no problems. The knife does exactly what the description says, makes the job of cutting raw meat a breeze. I have also used the knife for cutting whole chickens and the results could not have been better. I remember while washing the knife in warm water, by not paying attention I suddenly cut myself with the razor sharp edge, so fast it was that I did not feel it until it was way to late. This knife, like most sharp knives, requires good focus while using it to avoid a serious cut. The 10-Inch is a sizable knife, a little larger than some people might expect, but once used, most would agree that it is a superior brand. 4.5 Stars. Read more
