Picky picky picky—October 25, 2021
I admit to being a geek about a lot of things. I'm a little sorry about it, so I'll give you a normal and a geeky review. Normal review: This is a very comfortable, lightweight, extremely sharp, well-balanced knife for an incredible price. It has the usual, for a Japanese-style knife, 30-degree bevel (15 degrees on each side) vs. the usual 40 degrees for a European knife. That makes for a sharper knife, but the edge requires gentler treatment because it's supported by a thinner wedge of steel. Slice, dice, and mince, but it isn't the tool for chopping through hard bones. Geeky version (I did warn you): Most knife reviews give you an opinion about the sharpness of the blade. I wanted an objective measurement. I have an edge sharpness tester (BESS "C"). The number scale is the grams of pressure to sever the calibrated test media. A high-end knife is usually in the 250g-350g range. This knife right out of the Amazon box measured 180g, which is extremely sharp, about the same as a utility single-edge razor blade. I looked at the edge through a stereoscopic microscope and I thought the factory sharpening was quite good but could be improved. I sharpened it a bit more with my KME sharpener refining the edge with only their 1500 grit diamond stone to reduce the "tooth" of the factory sharpening scratch pattern and polished it with a 6-micron diamond lapping film. It now measures 75 grams which is exactly the same as I measured from an insanely sharp brand new Feather brand double. edge razor blade. Read more

I needed a knife that would suit my small hands with some grip strength issues that would make prepping vegetables and fruits more easily. It net all my needs! I think this line of knives is now called "classic" instead of "fibrox." -Super lightweight, balance feels fantastic. -Ergonomic, non slip handle is super helpful when prepping juicy veggies. -So sharp, it really does feel like it is cutting on it's own. -It hand washes very easily. Notes: -I have not tested putting it in the dishwasher, as I do not plan to. -It comes with a little plastic bag cover, no sheath unfortunately. Never would have thought of Victorinox or even Swiss made blades for cutlery, but I'm super impressed with the quality for the price and hope to get another piece from the "classic" line. Read more

I bought this for my wife, who is smaller and wanted a knife that was smaller and lighter than a typical Chef's knife. She has been using it for over a month now, and it has become her favorite knife. It's not the knife I pick up when I want to cut heavy cuts of meat, but for vegetables and most things it gets the job done. It arrived sharp and so far, even though it's used daily, I've been able to keep a keen edge on it with a few licks on a honing rod. Read more
