As other reviewers have stated, I have been happy with the quality and sharpness, the weight, the balance, and the durability of these knives. I initially bought this entire knife set mostly because I wanted the large knife and a decent sharpening steel. I thought I might also need a really sharp, quality paring knife. Buying these items separately would have been not all that much expensive than this entire set, so I went for it. Turns out that I most frequently use those items in this set that I didn't think I needed (the scissors, bread knife, and medium-sized knife): the medium knife is just the right size and maneuverability for most of my cutting tasks, and because it is so sharp, I mostly don't need the extra heft provided by the large knife. The sharpness of the paring knife actually turns out to be a problem if you are used to peeling apples and potatoes by pulling the blade towards your thumb as you turn the item you are peeling in your hand: just barely touching my thumb with the blade caused my band-aid use to skyrocket for a while. I also didn't think I needed "easy clean" scissors - but now I use (and wash) them daily, and each time I am very happy that the blades disassemble and clip back together without fuss. And the bread knife? Well, though I am very fond of my wobbly-bladed wooden-handled ca. 1970 bread knife, I almost never use it now--the Wusthof bread knife make slicing so much easier that it has trumped my attachment to that smooth, worn, wooden handle. Having the honing steel right in the block has trained me to hone each knife before I slide it back into its slot. After nearly a year of using it, I also bought a Wusthof sharpener (not part of this set, but easily parked on top of the block), which has not only allowed me to touch up the knives in this set as they dulled a little, but has also breathed some life back into a couple of very old knives I'd kept in the extra slots of the storage block but had not been using much any more. So - unless you know exactly what you need or want, it might indeed be worth it to take the plunge and buy this entire set. You might be surprised. Read more

I was a little brave and put my full weight on the paring knife, and it did not break or distort after bending, these knifes are the real deal. My set came with the $80 or so knife honor that I use about every other use and they hold an edge extremely well. I feel bad a guy left a review saying the handle broke on his set and I think he's either lying or using his as throwing knifes because I don't believe with this type of quality you could do that with real kitchen use. Also I have attached a photo showing the "P-tech" handle design where you can see by the way the photo comes out of focus the way the edge is manufacturered. I would never sharpen this knife myself (and I hand sharpen with 8000 grit whetstones) just because it would not hold as fine of an edge as this machined edge, unless it absolutely needed it. This being said your knifes are only as good as you treat them so if you are planning on buying these knifes only hand wash after use and use the honer, and learn how to, regularly and these knifes will be the last you will ever buy. **Also there was some wood glue on the block from manufacture defect but it is also pretty nice looking and fits well with the rest of our kitchen stuff. The Wusthof Classic line of knives is an excellent choice as a workhorse in the kitchen. I have had a set for 4 years and have put them to use for nearly all phases of preparation. Butchering fish, chicken, sectioning bones and heavy chopping are handled easily by the Chef knife. I have added a Santoku to the set to manage thin slicing preparations. The bread knife cuts heavy bread well. The slicing knife is everyday good. The knives are made of very hard metal that holds an edge for a long time. The knives will need to be sharpened at some point so it is good to be up on sharpening in order to have the continued performance. The sharpening is best handled by the use of a quality whetstone. Honing with the given steel to keep the edge straight works well between sharpening to keep the edge straight. Check out a few YouTube videos on sharpening. For everyday general kitchen use this is an excellent value. Read more

Wusthof Knives demonstrate the value of having the right tools for the job. They aren't cheap, but they're worth the money. I went with the classic as opposed to the Ikon series because the blades are made of the same steel as the Ikon series but with different handle materials. They "feel right" in your hand, take and hold an edge nicely, and they are a delight to use. The block has extra slots for steak knives and other knives so you can add to your collection over time.
