Great for stabilizing real cream, not as standalone product
It was difficult to test this product because the instructions are so half-assed. It basically says "mix with water" but neglecting to say how much water for how much product. Guess it never occurred to whoever wrote those instructions that there's a correct proportion that would actually yield whipped-cream texture and correct sweetness. Shows how much they care about this product. Anyway, I had to use trial and error. With a 2:3 ratio of powder to water by weight, I got a dense pudding-like texture that can be piped like whipped cream, but rather sweet. If I thin it out to a pleasant sweetness, then it's too runny. It can't even hold soft peaks at that point. It also firmed up a lot more after refrigerating. As for flavor, it's not unpleasant but rather subpar. The sweetness is somehow too sweet and not sweet enough at the same time, possibly because they use some cheap artificial sweetener with an unsatisfying kind of sweetness (presumably the maltodextrin). The vanilla flavor is flat and one-dimensional, like artificial vanillin. It seems this product would make a lot more sense as a stabilizer for real whipped cream, rather than a standalone product. It's also much more cost-effective that way, and I can confirm it works. The magic ingredient here is modified food starch, which is also found in instant pudding, and I have indeed been using instant pudding to stabilize whipped cream successfully for years. The only downside of instant pudding is the slight yellow tinge, but this product solves that problem, yielding snow-white yet stable whipped cream. And the weak flavor doesn't matter because your whipped cream presumably already tastes great. I typically use 6-8g pudding powder per 1 cup heavy cream, depending how stiff I want the final cream to be. This product should be similar. Just sprinkle directly on the cream before whipping. At those usage rates, this bag should last a long time (up to 12 quarts of heavy cream, whew) and the steep price is more justified. Basically this seems like a useful product with poor translated labels and instructions. I rate this a 2/5 if used literally as the label says, to make "whipped cream", but 5/5 as a whipped cream stabilizer. I'll be generous and round up the total to a 4. Read more
