I recently tried out this High Carbon Steel Knife Set and have been incredibly impressed with the cutting performance. While I did encounter a small issue with the wooden block right out of the box, the quality of the knives themselves makes this set a solid investment for home cooking. Knife & Scissor Performance (5/5): ~Exceptional Sharpness: The most important factor, the blades, are truly extremely sharp. They make quick work of everything from vegetables to tough cuts of meat. I was particularly impressed with how easily they sliced through steaks and chicken with very little force. ~Quality Materials: The knives and scissors appear to be made of very strong and durable material that gives me confidence they will last for years. ~Ergonomics and Balance: The handles for both the knives and the scissors are excellent. They have a nice, balanced weight and fit very comfortably in my hand. This comfort factor is huge—I used them for prolonged periods of cutting meat and didn't experience any hand strain or discomfort. Block & Storage Concerns (3/5): I have two main concerns with the wooden block: 1. Assembly Issue: When I took the knife block gently out of the box, the wood section designed to hold the steak knives fell apart at the joint. While it wasn't difficult to screw it back together, it was definitely concerning to have a brand-new item fall apart. Once reassembled, the block is rather durable and very stable. 2. Magnetic Sheathing: Although expected based upon pictures for the product, I was disappointed that the larger knife is not fully sheathed but instead rely on a strong internal magnet to stick to the side of the block. While the magnet is secure, I personally prefer a traditional, covered slot for safety. Important Care Instruction: NOT Dishwasher Safe: *A crucial note for buyers: These high-carbon steel knives are NOT dishwasher safe. To maintain the edge, finish, and durability of the material, they must be hand-washed and dried immediately after every use. This is a standard requirement for high-quality steel, but worth pointing out for those expecting dishwasher convenience. Final Recommendation: ~If you are looking for a set of functional, ergonomic, and incredibly sharp knives at a great value, I highly recommend this set. The high-carbon steel blades and comfortable handles are professional quality. Just be prepared to hand-wash and be mindful of the magnetic storage for the larger blades. Wow these knives are sharp! I don't think I've ever used knives this sharp before! I like the all-steel design because I think it will help this set last even longer. I also like that the largest knife does not have a slot but instead has a magnetic panel on the left side of the block which works very well. I'm not a huge fan of the 2-tone colors of the knife block, but I can overlook it because the knives are so great. I will note that after a few weeks of use, the black part of the knife block is starting to get little poke marks on the top where someone has tried to put the knives back in but missed the slot a bit (because it's hard to see an all-black slot in dim lighting) so now the wood underneath the black paint is showing through. I'm sure a sharpie will be able to remedy the problem, but I'm also sure it will continue to happen. The one thing I wasn't used to with this set is that if you let one of the knives stay wet, the little letters that are engraved in each knife ("KN"?) will rust and change color. It's not drastic, and I try to always wash and dry them right away, but beware, the first time you leave them wet, it will happen. Overall this set is amazing and worth the price! Read more
