I’m very enthusiastic about this compact paring knife. It’s very sharp. I needed to slice up some Persian Cucumbers to make some homemade pickles. This sharp knife gave me a clean slice just as fast as I could run the knife through the cucumbers. There was absolutely no raggedy bits. The slices have to ferment evenly, which they will with these clean edges. I haven’t had many good knives in my lifetime. I know that people rave about the wonders of good, expensive knives, but my research showed that it can be hard to tell the difference between a good one and a great one, or even a good one and a bad one. Like most things, simply paying more doesn’t mean that you’ve got good quality. You won’t know until you’ve got it home and started to use it. So, I have to say that this one is fantastic. This is a very sharp paring knife—easily one of the sharpest I’ve used. It arrived well packaged to protect both the blade and handle, and it includes a protective sleeve for the blade, which I’d recommend keeping. The blade also has a nice swirl pattern that gives it a clean, finished look. I tested it by slicing a cranberry as thin as I comfortably could. The photos are at 5.6x zoom, and the slices came out paper thin. It works great for peeling fruit or making precise, detailed cuts. The handle has a nice curve that makes it feel natural and comfortable in the hand. I have average-to-larger hands, and the grip felt secure and well balanced. This is my third knife order from this supplier. The first was a brisket and boning knife set. On the back of that I also ordered a chef knife. All performed great and also looked attractive. So far, I have not needed to sharpen so can't comment on that aspect yet. On the back of the first three knives, I got this paring knife and it certainly lives up to expectations. Out of the box, it is scary sharp and need good control and technique to ensure you keep your fingers safe. Although I wouldn't normally use this knife for mushrooms, I had some on hand to test the capabilities and it was effortless to cut wafer-thin slices. This certainly lives up to expectations! Doing a lot of cooking, there is nothing better than a knife that does it's job and this one is one of those! Sharp (even the tip so watch out)! The size and curve of the handle fits well in the hand. It comes with a sheath to protect it and ensure it stays sharp in the drawer. The anti slip serration at the top is a nice touch. I have a few paring knives and none of them have this feature. It comes in a beautiful box that would make it great for a gift for that chef in your life (be it casual or more advanced). This paring knife came very beautifully packaged. It has a sheath for the blade, a great safety feature for storage. And, holy moly, I mean to tell you, this thing is SHARP. It cut through raw potatoes like butter. It has a nice weight to it and it feels well balanced. The handle is comfortable and does not get slippery when wet.
