Fukuoka Prefecture is also known as a production area for gyokuro, with Yame Traditional Hon Gyokuro being the most famous.

  • 🍵The quality of Yame-cha tea leaves can be judged by the color and shape of the leaves. The darker green and slender the tea leaves, the higher the quality and the more luxurious the tea leaves. The later in the year the tea leaves are picked, the more yellowish they become.
  • 🍵In addition to the commonly drunk sencha and shiraore, Yame-cha also has kabuse-cha and fukamushi-cha. Furthermore, the famous high-quality tea leaf gyokuro is a representative green tea of Yame-cha, characterized by its lack of astringency.
  • 🍵Yame-cha is a high-quality tea with characteristic sweetness and umami. The water temperature should be below 60°C and wait slowly. Depending on the tea leaves, wait for about 1.5 to 2 minutes.
  • 🍵The higher the quality of the tea leaves, the more you wait at a low temperature. In the case of gyokuro or traditional hon-gyokuro, pour lukewarm water at about 40°C over plenty of tea leaves and wait for about 2 minutes until the sweetness and umami come out.
