This knife sharpener is way better than I thought it was going to be. The packaging it came in was very off-putting and was reminiscent of one of those as-seen-on-tv gadgets, and truth be told, it definitely looks like that as well. However, if you have a bunch of cheap knives -- you know the kind -- from the grocery store or from the clearance areas in the department stores that are like 3 for 10-15$ or less... that are fairly decent for about a month or so, then this sharpener is for you. I would definitely avoid using it on any expensive knives (>$50), because the sharpening mechanism used would very likely pit your cutting surface. For those cheaper knifes, though, this thing pretty much restores them to new in 30 seconds or less. As long as you draw in one direction all the way from the hilt to the tip with one motion and even pressure, you wont damage the knife like some other sharpeners do. This knife sharpener has 2 different angles. The recommended angle you would want to use depends on what the knife is used for. It has 15 degrees for general slicing of fruits and vegetables and a 21 degree sharpener for slicing semi-frozen meat or really finely slicing fruits and vegetables or cleaning fish. It doesnt have a steeper angle for heavier choppers, but it does work on serrated knives. That was quite surprising and did not strip my serration and so that offset that bit of disappointment. It is really easy to use and you place it firmly on the counter or flat surface for more leverage or if you are somewhat strong, you can hold it and position it so that you can slice away from yourself and get a nice even and clean grind. A word of caution, just like with most sharpeners, if you don’t complete a full stroke, do not start in the middle of the knife or you will most definitely cause a pit in the edge of the blade. Just start a new stroke and follow it all the way through. If you do about 5 or 6 full strokes per blade will make a night and day difference in the cutting power of your knife and it will bring those old cheapies roaring back to life! It is great for camping and fishing too as it does not require any power. It is light weight and doesn’t take up too much room. I am not sure how many times you can use it before having to replace its blades, but I did a drawer full of old knives, about 12 of varying types and sizes and it worked very well without changing the feel of the device or the resulting sharpness of the blade. Verdict: I recommend this product for sharpening your old cheap knives that you may have been thinking about throwing away because all they do is crush what you are cutting. It will make them new again. I don’t think I would use it on more expensive knives mainly due to the quality of the metal and the type of sharpener it is. I think it would damage the more expensive knives more easily than the cheap steel of the bargain utility knives. I could be wrong, so definitely consult someone who is more knowledgeable about cutlery. Of course they will probably tell you to get them laser sharpened from a professional and if you have enough money to have knives like that, they you maybe want to do that. I'm sure this won't do as good a job as a $100+ knife sharpener, but my moderately priced kitchen knives don't warrant that. This sharpener is very economically priced and really seemed to do an excellent job. I pulled a couple of my knives through it a few times and they were noticeably sharper. The sharpener is very easy to use. You just place your knife on the counter, blade straight up. It looks scary! Be careful. Then you carefully pull the sharpener down the blade a few times. Be sure to pick the correct angle. One is 15° for Japanese style knives; the other side is 21° for European style. They're not labeled, which is disappointing, but I won't knock off a star for that; it's easy enough to eyeball the two sides and see which one is noticeably wider than the other. The narrow one, of course, is the 15° for the Japanese knives. I have a set of European ones with the wider (less sharp) blades, and that's the one I used. I was impressed at how much sharper they were after a couple passes. Maybe someday I'll have a nice Japanese chef's knife and can try the 15° side of the sharpener. At this price, you can't go wrong. This will easily remove layers from the edge of your knife while sharpening. If it is a cheap knife, then, no worries, as it will definitely be sharper when you are done. But, a pricy knife... feels like you are damaging it. So, this is great for your general knives and scissors. But I would invest in a higher quality sharpener for your good stuff. Read more
This sharpener is very easy to use. The most complicated part is figuring out which angle to use on your knife (although the package does give some general guidance). It does a good job of everyday sharpening, and it is nice to have both common angles included. You will want something more for fancy knives, but for average quality knives this is great for keeping them sharp enough to work well without a lot of fuss. Read more
