Calling it "The worlds best pan" seems like it may be a bit over the top, but I have to be honest, I am really impressed My past 2 stoves have had ceramic tops and I was always scared to use a cast iron pan as I tend to move the pans aroudn while cooking. Now my search is over, this pan is really like a non-stick coated cast iron pan that you can use on induction or ceramic tops. While the description says this is all aluminum, I am not sure about that as its really heavy, like cast iron heavy. The product manual also says the pan heats up quickly. It does not, like a cast iron pan it takes a while to heat up but maintains a steady heat. The first thing I made in this pan is home fries. I chose this to test out because in my stainless pans the starch from the potatoes always sticks to the pan. There was none of that here.. I could have just cleaned out the pan with a paper towel, just like a cast iron pan. Is this world's best pan? Not sure about that but it is really a great pan. All of the upside of a cast iron pan but not cast iron. I know its pricey, but I have a feeling it will hold up to lots of use. Read more

Despite being a fairly enthusiastic home chef, I have never owned a pan in this price range. The next most expensive pan I own is an 11" de Buyer carbon steel fry pan that I think retailed for about $100 and I received as a gift. They are both quite heavy and conduct heat evenly. Perhaps an advantage of this AMT pan is ease of maintenance if it is a shared pan with other people that don't understand the importance of seasoning and proper cleaning techniques with carbon steel. Although with this pan, you should make sure other users limit their utensils to those made out of wood or maybe silicone at lower temperatures. The high walls of the AMT pan are pretty great for keeping splatter down when frying but make flipping an omelet or a pancake more difficult. Cleaning it is a breeze. I wasn't able to test it with an induction range, as my range uses natural gas. You're unlikely to be disappointed by this pan. It's also probably out of the price range of many households. While it has an extraordinarily ambitious name for something that is ultimately subjective, I do appreciate their moxie. If you ever end up in an action movie, it will take out at least one thug.
