Very sharp, I have a lot of electronics appliances in my kitchen because I love cook, and the design is amazing for the space. Are the heavy enough for cut the vegetables or the meet and you won’t get tired!! Cangshan N1 Knives are absolutely the BEST knives I have ever used in my 50 years of cooking!! These blades are extremely sharp and hold that sharpness for a long time. I use them everyday....2 to 3 times a day. The are extremely well made and balanced. They fit my hand perfectly and the weight on them is very comfortable. And if that doesn't convince you, this might...these are all made as 1 piece....no handles or rivets to rattle or break off later! If I could give them 10 Stars, I would. I wish I had a better picture of these but I’m not a chef and am just learning how to use my new knives. What I can tell you however, is that these knives makes me want to be a chef! Wow! They cut like a dream! They can be balanced on your fingertip so I know that the blade is equal weight to the handle. I love that both blade and handle are metal because it makes clean up easy and worry free! We simple use a gentle sponge to clean and a soft towel to dry and then slide the knife right back into its holder. The holder, by the way, is also quite beautiful! I can imagine this knife set and holder both being on display in a designer home or kitchen! They would both be gorgeous additions to any home! I have a hard time deciding which knife I like the best and I know they all have different names so I won’t try but the two larger knives definitely get the most workout in our home. Everything from chopping delicate herbs to slicing tough meats... these knives make beautiful cuts on everything and turn a plain meal into a beautiful meal with little effort! Knives look nice, they are sharp, and look of good quality, but they aren't made of alloy steel as it says on the website. They are made of high carbon steel, which is different. I was a bit disappointed about that, but I'm still excited about using them. Read more

I previously ordered the Cangshan N1 Series 59151 German Steel Forged Santoku Knife, 7-Inch. I was looking to order a few other knives from the Cangshan collection when I saw this set. This set is new to their collection. I have only had it for just over a week but I love the look of it. The knives are balanced well and have a unique look to them. They are incredibly sharp and feel good in your hand when using. The block is heavy and looks amazing. There is a small chance that the block could fall over but would take a strong hit to accomplish. The knives do have to come out of the block from the top so if you put under a cabinet you will have to move to get the knife out. I can't comment on the longevity of the knives due to not having them that long. This will also vary from person to person and will depend on their cleaning technique. I love these knives! I can't say anything about their durability since they're new, but they are by far the sharpest knives I've used. I judge a knife by how hard it is to cut through a butternut squash (or similar) because that's where I always run into issues with knives. So, that's the first thing I did with this knife. It was so easy, only took me about 3-4 cuts and no elbow grease. I also tried out the smaller knives on apples and oranges. Each cut was super easy, and it could slice very thin. Cutting through the tough orange skin was as easy as cutting the apple. The knife does all the work. The block is very beautiful as well. This seems to be a pretty new brand to the market, but they definitely deserve a place among the top knives. My advice is to buy some before they make a name for themselves and can charge twice as much. I added a pic with a sweet potato so you could see how thin it slices. Each slice was one smooth motion.
