The handles are ergonomic and well balanced, so the knife feels like it becomes part of your hand rather than something you have to fight with. Long chopping sessions don’t make my hand feel tired. I recently bought this Cangshan knife set, and I’m genuinely impressed. From the moment I opened the box, it was clear this was a high-quality, beautifully packaged set. The wooden block is not only well-crafted and visually appealing but also thoughtfully designed with drainage holes at the bottom to prevent moisture buildup--an excellent touch. The knives themselves are extremely sharp right out of the box. They cut through meat like butter and handle vegetables and other tasks effortlessly. Even the steak knives are sharper than what you typically find. The blades have a polished, professional finish, and the high-alloy German steel feels strong and well-balanced. While I couldn't find a Rockwell Hardness rating, the steel holds its edge well and performs like a much more expensive set. The overall weight is balanced. It's substantial but not heavy. I do wish the handles were a bit more textured or made from a material like wood or plastic for added grip, as the all-steel handles can get a bit slippery when wet. Assembly and variety are excellent. Everything you need is included, from chef and Santoku knives to kitchen shears and a sharpening rod. My only real gripe is that you must hand wash and dry the knives immediately. If left damp, they may develop rust spots. That’s the only reason I’d consider knocking off a star. Still, for around the price of a single premium knife, this set delivers incredible value. I’ve tried many knife sets over the years, and this is by far the best I’ve used in terms of quality, design, and performance.
