These stones work great! I sharpened 7 knives as soon as I received the stones. 5 of them were very dull kitchen knives that were not fit for kitchen tasks. I used the 400 grit to remove the nicks and re-establish a good apex, then used the 1000 grit to obtain a razor sharp edge. I used a honing rod in the final step. It took about 30 minutes to sharpen one knife. After sharpening 7 knives the stones are still in good shape and the knives will shave hair off my arm. I'm not sure about the long term durability of these stones but I sharpened all the knives I own and the stones are still in great shape. I don't expect to need to use them again for major reconditioning of the blades, but if I do I know they will work well. As an unfortunate testament to the sharpness I obtained, my wife and daughter both sliced their fingers while chopping vegetables. I'm sorry that happened but at least I know what these stones are capable of! I would recommend these for anyone with very dull knives that need to be reconditioned. Just don't go overboard on your knives or you might need stitches! Read more

decent sharpener, good price, but takes some practice

This sharpener has a nice storage case and is fairly easy to use once you get used to it. I am a professional knife sharpener who uses Japanese waterstones. When my sister received a nice Japanese santoku knife (MAC brand), I knew that she would need a better sharpener than the pull-through V-type carbide edged sharpener she has been using for her other kitchen knives. For one thing, the angle of the V is wrong for a Japanese knife, and for another, the carbide honing is a terrible way to sharpen any knife, let alone the harder steel in a Japanese knife. Although waterstones would be the preferred way for my sister to go, waterstones eventually "dish", and a flat surface is highly desirable for use. Therefore, she would need to invest in at least two waterstones (medium and fine grit), or a double-sided waterstone, AND she would need to get a lapping stone or plate. To go the waterstone route would cost at least $50 for sharpening equipment. (I have also used sandpaper to flatten waterstones, but that gets messy, and a bit out of my sister's expertise IMHO.) So, I searched Amazon and found this modest priced double-sided diamond sharpening plate. I also note that diamond coated plates are often referred to as "stones" even though there is no stone in the substrate. The diamonds are embedded in or bonded to a metal substrate. Because I recommended it to her, I figured I should buy one for myself, too. This review, by the way, is for the 600/1200 version. After receiving it, I took the device for a test spin. Several test spins, in fact. PRO The two sides are equivalent to a medium-coarse and a medium-fine stone. Fairly accurate for the grit estimation (600 and 1200 equivalents). The 600 side is modestly aggressive. It can be used to restore an edge to a damaged knife, though it takes a while. Diamond stones do not need a lot of pressure, just a consistent sharpening angle and enough time. The 1200 side can create an edge that will easily slice paper - the ability to slice paper is often used as an indicator that a knife is "kitchen-sharp." Not razor sharp, mind you, but certainly sharp enough for cutting meat, chopping onions and other vegetables, and mincing garlic, among other cutlery tasks. The price is a big selling point. Other diamond sharpening plates cost a lot more money. (a LOT more money. Just search Amazon.) The sharpener comes with a plastic cover that keeps it clean during storage. The sharpener's plastic base acts as the platform for holding the plate off the counter at an adequate height. Many ceramic stones and other diamond sharpening plates require a separate holder that raise the honing surface high enough for easy sharpening. The manufacturer claims that the diamonds are monocrystalline. If true, and I have no reason to doubt them, this is a good feature. Polycrystalline diamond sharpeners wear out quite rapidly. CON The base has rubber feet, but because the sharpener is rather lightweight, I found that it does not want to stay in one place when the knife is pulled across its surface. This behavior can be reduced or eliminated by putting a damp washcloth or towel on the counter. The honeycomb design of the sharpener face is supposed to collect the metal that is removed from the edge of the knife during the sharpening process. However, a small knife such as a paring knife tends to catch its edge in the honeycomb lines. Some practice in maintaining a proper angle of the knife relative to the lines can minimize this problem, but even then I still would occasionally catch the edge in a line. When the knife catches a line, further movement drags the entire sharpener with the blade. Reducing the pressure of the blade on the diamond surface, or changing the angle of the knife edge relative to the lines in the honeycomb pattern can reduce this problem, but it is still an annoyance. When first received, the surface of both the 600 and the 1200 sides was rather coarse - almost like a 120 grit diamond sharpener surface. I found that I had to use a large knife, like a chef knife or a santoku knife, for about 5 minutes on each side to wear down that coarse coat and get the surface to where it felt like the appropriate grit. FINAL THOUGHTS This sharpener is a good addition to a typical kitchen where your budget is limited. It will work on virtually any kitchen knife and put a decent edge on your knives. It will sharpen both high-end knives like European (Wustoff, Henkel, Victorinox) and Japanese (Shun, MAC, Global) and also on low-cost knives (Chicago Cutlery, Farberware). Of course, if you want a diamond sharpener and you also have expensive knives, you can probably afford a higher end diamond sharpener, such as by DMT or my personal favorite, the large size double-sided SHARPAL (search Amazon). I bought this 600/1200 stone, and after only 2 minutes my knife was perfect again! I have never used this type of stone before, and I did not even look for instructions. I just pulled out the stone; used the 600 side to get the edge shaped the way I wanted; then used the 1200 side to get it perfectly sharp. I have had this knife for 40 years and I use it every day.
